Pasta Pesto with Chicken

Cook pasta in boiling lightly salted water according to package directions
- 3/4 lb. shell shaped pasta
- 2 (6 oz.) packages Perdue Short Cuts carved chicken breast, cut into bite-size pieces
- 1 (11 oz.) container pesto
- 1 cup jarred roasted red peppers, sliced into thin strips
- 1 cup halved yellow and re grape tomatoes
- 1 Tbl. olive oil
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 2 Tbl. chopped fresh parsley
Chicken with Balsamic Onions and Parmesan Potatoes

Preheat the oven to 400 degrees
- 2 lbs red potatoes, cut into 1/2 inch cubes
- 3 Tbl. butter
- 1/4 cup grater Parmesan cheese
- 1/4 cup chopped flat-leaf parsley
- Salt and pepper
- 3 Tbl. olive oil
- 4 skinless, boneless chicken breasts
- 2 medium red onions, thinly sliced
- 3 Tbl. balsamic vinegar
- 4 cups (about half a 5 oz. pkg.) baby spinach, loosely packed
Potato Gratin

Preheat oven to 350 degrees
- 3 Tbl. olive oil
- 2 red onions, peeled and sliced
- 4 cloves garlic, thinly sliced
- 1 cup sliced leeks, white and pale green parts only
- 4 Idaho potatoes, peeled and shredded on a box grater (about 2 1/2 lbs.)
- Salt
- Freshly ground pepper
- 1 Tbl. unsalted butter, melted
- 1/2 cup bread crumbs
- 3/4 cup shredded cheddar cheese
- 2 cups heavy cream
Hot Dog Hors d'oeuvres

Microwave jelly until it gets smooth about 1 1/2 minutes
- 1 (10 oz) jar of current jelly
- 1 (6 oz) jar of prepared mustard or 3/4 cup
- 1 pkg. cocktail weenies
- 1 pkg. little sausages
Blue Cheese, Lettuce, and Tomato Pizza

In a large bowl, toss together the tomatoes, onion, garlic and 1 Tbl
- 3/4 cup grape tomatoes, halved
- 1/4 red onion, thinly sliced
- 2 cloves garlic, finely chopped
- 2 Tbl. olive oil
- salt and pepper
- 1 lb. store bought pizza dough, shaped into 2 disks
- 1 cup (about 4 oz.) crumbled blue cheese
- 1/2 cup (about 2 oz) shredded mozzarella cheese
- 1 romaine heart, thinly sliced
- 5 large basil leaved, torn
Watermelon Lemonade

- 1/3 cup fresh mint
- 1/2 cup plus 1 Tbl. Kool-Aid Lemonade Flavor Sugar-Sweetened Soft Drink mix, divided
- 1/4 cup fresh lime juice
- 4 cups watermelon chunks
- 1 cup club soda
- 2 cups ice cubes
Slow Cooker Pork Tenderloin**

Mix ingredients above. Pour over tenderloin in the crock pot and cook on low for 6 hours
- 2 lb. Pork Tenderloin
- 1/4 cup low sodium soy sauce
- 1 Tbl. mustard
- 2-3 Tbl. maple syrup
- 2 Tbl. olive oil
- 2 Tbl. diced dried onions
- 1 1/2 tsp. garlic salt or powder
Key Lime Cheesecake

Preheat oven to 325 degrees
- Crust:
- 1 1/2 cup gingersnap crumbs
- 1/4 cup sugar
- 1/4 cup margarine, melted
- 2 tsp. lime zest
- Filling:
- 1 1/4 lb. cream cheese, softened
- 3/4 cup sugar
- 1 Tbl. + 2 tsp. Key lime or reg. lime juice
- 1 1/2 Tbl. flour
- 3 eggs
- 1/4 cups heavy whipping cream
- 2 tsp. lime zest
