Garlic Bagel Chips

- 1/4 cup extra virgin olive oil
- 3/4 teaspoon fine salt
- 1/2 teaspoon granulated garlic or garlic powder
Double-Stuffed Baked Potatoes

These potatoes have a slightly crisp, chewy skins and a rich, creamy filling
- Ingredients
- 4 Medium russet potatoes (about 8 ounces each), scrubbed, dried, and rubbed lightly with vegetable oil
- 2 Tablespoon unsalted butter
- 1 Large shallot, finely chopped (about 1⁄2 cup)
- 3 garlic cloves, finely chopped
- 1/4 Cup heavy cream
- 8 Ounce Camembert cheese, cut into pieces
- 1/4 Cup crème fraîche
- 2 Large eggs, separated
- 1/4 Cup chopped fresh chives
- Kosher salt
- Freshly ground black pepper
- 1/4 Cup Parmesan cheese
Drunken Fish

1. Thaw fish, if frozen. Rinse fish; pat dry
- 4 fresh or frozen halibut or salmon steaks, 1 inch thick (about 1-1/4 pounds)
- 3 dried ancho or mulato peppers or 2 to 3 tablespoons chili powder (see tip, page xx)
- 1/4 cup tequila or dry red wine
- 1/2 cup chopped onion (1 medium)
- 2 cloves garlic, minced
- 1 Tbsp. olive oil or cooking oil
- 2 cups chopped tomato (2 large) or one 14-1/2-oz. can diced tomatoes, undrained
- 1/2 tsp. dried oregano, crushed
- 1/4 tsp. salt
- 1/4 tsp. ground cumin
- Lime slices (optional)
- Fresh oregano sprigs (optional)
- 3 cups hot cooked rice (optional)
Chicken-Vegetable Soup

Place all ingredients, except chicken, in a large pan and simmer for one hom or until vegetables are soft

Grilled Chicken Florentine Pasta

1. Prepare grill to medium-high heat
- 2 (6-ounce) bone-in chicken breasts, skinned
- 3/4 teaspoon salt, divided
- 3/4 teaspoon black pepper, divided
- Cooking spray
- 8 ounces uncooked linguine
- 2 tablespoons canola oil
- 3 tablespoons all-purpose flour
- 1 teaspoon chopped fresh garlic
- 1 cup whole milk
- 1 cup fat-free, lower-sodium chicken broth
- 3 ounces Parmesan cheese, grated (about 3/4 cup)
- 4 cups fresh spinach leaves
Island Chicken with Pineapple Salsa

Open pineapple and strain to separate juice from fruit
- For The Marinade:
- 16 ounces boneless, skinless chicken
- 1 can (8 ounces) unsweetened crushed pineapple, juice only, (reserve fruit for salsa)
- 1 T low-sodium soy sauce

- 2 cloves garlic, minced
- 1/4 t red pepper flakes
- For The Salsa:
- Pineapple from strained can
- 1 mango, peeled and diced
- 2 kiwis, peeled and diced
- 1/4 c red onion, diced fine
- 1 lime, juiced
- 1 T cilantro, chopped
- 1 T jalapeno pepper, diced fine (optional)
