Spiced Pork Chops with Apple Chutney and Haricot Verts

Apple chutney is a heart-warming topping for pork in this family-friendly dinner of spicy, boneless chops
- CHUTNEY
- 1 tablespoon butter
- 5 cups (1/4-inch) cubed peeled apple (about 3 apples)
- 1/4 cup dried cranberries
- 3 tablespoons brown sugar
- 3 tablespoons cider vinegar
- 2 teaspoons minced peeled fresh ginger
- 1/4 teaspoon salt
- 1/4 teaspoon dry mustard
- 1/8 teaspoon ground allspice
- PORK
- 3/4 teaspoon ground chipotle chile pepper
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground coriander
- 1/4 teaspoon black pepper
- 4 (4-ounce) boneless center-cut pork loin chops, trimmed
- Cooking spray
- 12 ounces haricots verts or French green beans
- 2 teaspoons olive oil
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 2 garlic cloves, sliced thinly
Brian's Butter-Fish

Delicious Grilled Soy-Lemon Seafood
- 2 tbs butter or margarine, melted
- 3 tbs soy sauce
- 2 tbs lemon juice
- 1 tbs sugar
- 1 tbs Worcestershire
- 1 tbs minced fresh ginger
- 1 clove garlic
- 1/8 tsp pepper (Tony’s)
- 2 lbs sea bass, halibut or any filet
Melt-in-Your-Mouth Broiled Salmon

1) Preheat the oven's broiler and set the oven rack about 6 inches from the heat source
- 1 clove garlic, chopped
- 2 tablespoons olive oil
- 4 (6 ounce) salmon fillets
- 1/2 cup butter
- 2 tablespoons Worcestershire sauce
- 2 tablespoons lemon juice
- 1/4 cup white wine
- 1 teaspoon ground black pepper
- 1 teaspoon garlic salt
- 1 1/2 teaspoons fines herbs
- 1/4 cup chopped fresh dill
Poached Eggs and Pasta

Place a pot of water on the stove to boil
- 2 servings (1 1/3 c) whole wheat penne
- 1 c no-salt added marinara sauce (If you want to spruce up the jarred sauce, add a 1/2 t oregano and a pinch of red pepper flakes.)
- 2 eggs
- 4 c fresh spinach (I sometimes swap fresh or frozen broccoli or sliced zucchini for the spinach.)
Oven BBQ Chicken

Preheat oven to 350 degrees
- 4 skinless boneless chicken breasts
- 1 tablespoon agave nectar
- 3/4 cup reduced sugar ketchup
- 1 teaspoon chili powder
- 2 tablespoons Worcestershire sauce
Brine for Pork

Stir the hot water and salt together until the salt is dissolved
- 7 cups hot water
- 1/2 cup kosher salt
- 2 cups apple cider
- 1/2 cup maple syrup
- 1/4 cup brown sugar
- 2 tablespoons cracked black peppercorns

Oven Roasted Tomatoes

- 3 pounds plum (Roma) tomatoes
- 2 tablespoons extra virgin olive oil
- 3 cloves garlic, minced
- 1 t basil, dried
- 2 t Chef Meg's Italian Seasoning
- 1/2 t black pepper, cracked
Chicken Vegetable Casserole

Place chicken breasts in a small saucepan with a lid
- 12 oz chicken breasts, boneless and skinless, poached, and cubed into 1/2 inch squares
- 2 T all purpose flour
- 2 T butter, unsalted
- 10 oz skim milk
- 1 pinch white pepper
- 1 t Italian seasoning
- 1 T parmesan cheese, grated
- 7 oz penne pasta, whole wheat
- 2 yellow or orange bell peppers, chopped
- 1 zucchini, chopped
- 2 heads, approx. 12 ounces broccoli, chopped
- 1/3 c monterey jack cheese
- nonstick cooking spray
Horseradish Sauce

- 1 cup (8 ounces) sour cream
- 3 to 4 tablespoons prepared horseradish
- 1 teaspoon coarsely ground pepper
