Red Velvet Cake

Can easily be made into cupcakes by using cupcake pan and shortening bake time
- 2 1/2 cups sifted cake flour
- 2 tablespoons cocoa powder
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 1/2 cups sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 cup buttermilk
- 2 oz red food coloring
- 1 teaspoon distilled white vinegar
- 1 teaspoon vanilla
Cheesy Hash Brown Casserole

Preheat oven to 325°F. Stir together potatoes, 1/2 cup butter, salt
- 2 Ibs. frozen hash brown potatoes, thawed
- 3/4 cup butter, melted, divided
- 1 tsp. salt
- Dash of pepper
- 1/2 cup chopped onion
- 1 can .(1O.75 oz.) condensed cream of chicken soup, undiluted
- 2 cups (8 oz.) 4 Cheese Mexican Shredded Cheese
- 2 cups crushed cornftakes
- Paprika (for color)
Burgers with Blue Cheese Mayo and Sherry Vidalia Onions

1. Preheat grill to medium-high heat
- Optional:
- 1/2 cup (2 ounces) crumbled blue cheese
- 1/4 cup canola mayonnaise
- 2 teaspoons chopped fresh thyme, divided
- 1/4 teaspoon hot pepper sauce (such as Tabasco)
- 1 pound lean ground sirloin
- 1 teaspoon black pepper, divided
- 1/8 teaspoon kosher salt
- 1/2 teaspoon extra-virgin olive oil
- 4 (1/4-inch-thick) slices Vidalia or other sweet onion
- Cooking spray
- 2 teaspoons sherry vinegar (we use balsamic and it's wonderful)
- 4 (1 1/2-ounce) whole-wheat hamburger buns, toasted
- 2 cups loosely packed arugula
- Fresh chopped garlic to taste
- Worcestershire Sauce to taste
- McCormicks Grill Mates Montreal Steak Seasoning to taste
Jalapeno Quail Appetizers

Cut each jalapeno half into three long strips
- 2 large jalapeno peppers, halved lengthwise and seeded*
- 1 pound boneless quail breasts
- 12 bacon strips
- 1 (16 ounce) bottle Italian salad dressing
Teriyaki Glazed Cod with Ginger Scallion Ramen Noodles

I recently bought a pellet grill
- For the Ramen Noodles:
- 2 tablespoons rice wine vinegar
- 1 tablespoon soy sauce
- 2 teaspoons fresh lemon or lime juice
- 2 teaspoons grated fresh ginger
- 1 teaspoon sugar or honey
- 4 tablespoons vegetable oil, preferably peanut
- 1 tablespoon Asian sesame oil
- 2 3-ounce packages dried Ramen noodles
- 3 scallions, trimmed, white and green parts thinly sliced
- 3 tablespoons finely diced red pepper
- 1-1/2 tablespoons toasted sesame seeds, preferably white and black
- For the Cod:
- 1/2 cup soy sauce
- 1/2 cup mirin or apple juice
- 1/4 cup brown sugar
- 1/4 cup Japanese sake
- 1-1/2 pounds skinless cod fillets
Lemon-Basil Chicken with Basil Aioli

To prepare chicken, combine first 6 ingredients in a large bowl
- Chicken:
- 1/2 cup chopped fresh basil
- 1/3 cup chopped green onions
- 2 tablespoons fresh lemon juice
- 2 tablespoons white wine vinegar
- 1/2 teaspoon lemon pepper
- 1/4 teaspoon freshly ground black pepper
- 4 (6-ounce) skinless, boneless chicken breast halves
- Cooking spray
- Basil Aioli:
- 1/4 cup finely chopped fresh basil
- 2 tablespoons low-fat mayonnaise
- 1 tablespoon fresh lemon juice
- 1 1/2 teaspoons Dijon mustard
- 3/4 teaspoon bottled minced garlic
- 1/2 teaspoon olive oil
Bourbon Beef Tenderloin

- 1 cup brown sugar
- 2/3 cup soy sauce
- 1 bunch cilantro, chopped
- 1/2 cup lemon juice
- 1 tablespoon Worcestershire sauce
- 2 cups water
- 3 to 4 sprigs fresh thyme, chopped
- 1 beef tenderloin, silver connective tissue removed (about 5 pounds)

- 1/2 teaspoon baking soda

- 8 oz pepperjack Cheese
- 1/2 cup roasted poblano peppersh
- 2 cups butter milk
- 1/2 cup water
crunchy baked Parmesean cod

- 1 cup corn flakes, crushed
- 2 Tbsp. Parmesan cheese, grated
- 1 tsp. dried dill weed
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 egg, beaten
- 1/2 cup milk
- 1 lb. cod fillets
- Lemon wedges
