tuna steak with chipotle barbecue glaze

Glaze Heat oil in heavy saucepan over medium heat
- Chipotle BBQ Glaze
- 1 Tbsp. oil
- 2 cups ketchup
- 2 cloves garlic, minced
- 4 Tbsp. honey
- 1/2 large white onion, minced
- 2 Tbsp. molasses
- 1 Tbsp. sweet-and-spicy BBQ seasoning
- 2 chipotle peppers
- Roasted Corn pico de gallo
- 4 ears of corn grilled, then cut off the stalk
- 2 tsp. sugar
- 2 tsp. lime juice
- 1/2 red onion, minced
- 1/8 cup cilantro
- 1 1/ 2 tsp. cumin powder
- 2 Tbsp. olive oil
- 1/8 tsp. smoked paprika
- Salt and pepper to taste

This guilt-free version is quick and easy and satisfies even the most discerning cheese lovers in our family
- 12 8-inch Corn Tortillas
- 1 cup shredded Mexican four cheese blend
- 1/2 cup fat-free cottage cheese
- 3/4 cup chopped white onions
- 1/2 cup part-skim ricotta
- 1 can (19 ounces) enchilada sauce
- 2 Tbsp diced green chilies
- 3 Tbsp sliced black olives

- 2 - cans 15oz corn drained
- 1-2 cans 15oz black beans, rinsed, drained
- 1 jar 16oz chunky salsa
- 6 - boneless chicken breasts
