Foolproof Rib Roast

Allow roast to stand at room temperature for at least 1 hour
- 1 - 7 pound Rib Roast
- 1 tablespoon and 1/4 teaspoon salt
- 1-3/4 teaspoons ground black pepper
- 1-3/4 teaspoons garlic powder
Diablo Sauce

To make sauce, heat oil in a heavy bottomed skillet until lightly smoking
- 1 tablespoon vegetable oil
- 3 shallots, chopped
- 3 garlic cloves, chopped
- 3 habanero chilies, chopped
- 1 teaspoon cumin seed
- 1 tablespoon grated ginger
- 2 red bell peppers, chopped
- 1/2 mango
- 1 cup chicken stock
- Lime juice and salt to taste
Apple Pie Oatmeal with Bruleed Crust

- Apples and Cranberries
- 1/2 cup water
- 2 tablespoons light brown sugar
- 1/4 teaspoon ground cinnamon
- 1/2 cup dried cranberries
- Pinch salt
- 1 large Granny Smith apple, peeled, cored and cut into medium dice
- Oatmeal
- 2 3/4 cups whole milk
- 1 cup quick cooking Irish oatmeal (recommended: McCann's)
- 1 teaspoon freshly grated orange zest
- Pinch salt
- 2 tablespoons granulated sugar
Crockpot Chicken With Pearl Onions and Mushrooms

Wash chicken and pat dry. Cut into chunks about 1/2 to 1-inch and put in a large bowl
- 4 to 6 boneless chicken breast halves, cut in 1-inch chunks
- 1 can (10 3/4 ounces) cream of chicken or cream of chicken and mushroom soup
- 8 ounces sliced mushrooms
- 1 bag (16 ounces) frozen pearl onions
- salt and pepper, to taste
- parsley, chopped, for garnish
Roasted Cauliflower Mac-N-Cheese

Preheat oven to 400°. Toss florets in oil on a baking sheet
- 8 cups cauliflower florets (1 head)
- 2 tbsp. extra-virgin olive oil
- 1/2 tsp. kosher salt
- 1/2 tsp. ground black pepper
- 2 tbsp. unsalted butter
- 2 tbsp. flour
- 1-1/2 cups fat-free milk
- 1/2 cup heavy cream
- 1/4 tsp. table salt
- 1-2 Cloves Fresh Garlic, coarsley chopped
- 1 cup grated sharp cheddar cheese
Garden Vegetable Frittata

A lovely egg dish that highlights all the flavors of late spring
- 1 pound asparagus
- 6 ounces button mushrooms
- 1 tbsp olive oil
- 1 clove garlic
- 1 shallot
- 1 small or 1/2 large zucchini
- 6 large eggs
- 1/3 cup 1% milk
- 1 tsp salt
- 1/4 tsp freshly ground black pepper
- dash nutmeg
- 1 tbsp chopped chives
- 1/4 cup freshly grated parmesan cheese
- 2 medium or 1 large tomato
Creamy Tomato and Roasted Pepper Soup

Heat 2 tablespoons oil in a 2-quart saucepan over medium-high heat
- 2 tablespoons olive oil
- 1 Vidalia onion, chopped
- 1 carrot, chopped
- 2 cloves garlic, chopped
- Kosher salt and freshly ground black pepper
- 1 tablespoon tomato paste
- 1 (14.5-ounce) can fire-roasted diced tomatoes
- 1 (12-ounce) jar roasted red peppers, drained and chopped

- Cheesy grits:
- 1/2 cup old fashioned grits, not instant
- pinch salt
- 1/4 cup low-fat evaporated milk
