Ingredients
- Chipotle BBQ Glaze
- 1 Tbsp. oil
- 2 cups ketchup
- 2 cloves garlic, minced
- 4 Tbsp. honey
- 1/2 large white onion, minced
- 2 Tbsp. molasses
- 1 Tbsp. sweet-and-spicy BBQ seasoning
- 2 chipotle peppers
- Roasted Corn pico de gallo
- 4 ears of corn grilled, then cut off the stalk
- 2 tsp. sugar
- 2 tsp. lime juice
- 1/2 red onion, minced
- 1/8 cup cilantro
- 1 1/ 2 tsp. cumin powder
- 2 Tbsp. olive oil
- 1/8 tsp. smoked paprika
- Salt and pepper to taste
- Tuna Steaks
- 2 8oz, 1" thick filets
- sweet n spicy BBQ rub

Step 1
Glaze
Heat oil in heavy saucepan over medium heat. Saute garlic and onions until onions become tender. Add chipotle peppers and saute for another minute. Add remaining ingredients and simmer until it reaches a glaze consistency.
Pico de Gallo
Combine all ingredients
Tuna Steaks
Season tuna steaks with sweet-and-spicy barbecue rub, then sear in pan or grill on both sides until you reach desired doneness.
Top tuna with glaze and pi co de gallo.
