Mini Spinach Lasagna Roll-Ups

- 8 lasagna noodles, cooked
- 1 (10 ounce) package Green Giant frozen chopped spinach, thawed and well drained
- 1 (15 ounce) container ricotta
- 1/2 cup Parmesan cheese
- 1 egg
- 1/2 teaspoon minced garlic
- 1/2 teaspoon Italian seasonings
- if salt and pepper, desired
- 1 (15 ounce) can Muir Glen organic pizza sauce
- 1 cup shredded mozzarella cheese
French Bean and Chanterelle Casserole

In a large pot of salted boiling water, add French beans and blanch until just tender, about 5 minutes
- 2 1/2 pounds French beans, with stems snapped off
- 2 tablespoons butter
- 5 large cippllini onions, thinly sliced
- 2 teaspoons paprika
- pinch of cayenne pepper
- 1/2 teaspoon freshly ground pepper
- 1/2 teaspoon salt
- 1/2 pound Chanterelle mushrooms, rinsed and coarsly chopped
- 1/2 pound Baby Portabella Mushrooms, sliced
- 4 tablespoons flour
- 2 cups chicken stock
- 1/2 cup Sour Cream
- 1 tablespoon fresh lemon juice
- 2 (4 ounce) Crispy Onions

- 1/2 teaspoon salt, plus more to salt boiling water
- 1 head cauliflower, cut into florets
- 2 cloves garlic, peeled and halved
- 8 ounces cream cheese, quartered

Maple-Roasted Brussels Sprouts with Hazelnuts

- 2 tablespoons flour
- 1 1/2 cups milk
- 1/4 teaspoon salt
- 1/8 teaspoon paprika
- 1/2 lb store-brand processed cheese, cubed (Velveeta)

- SOUP:
- 4 large potatoes, or up to 8 small potatoes
- Kosher salt
- Vegetable oil
- 2 sticks of butter
- 1 onion, diced
- 3/4 cup all purpose flour
- 48 ounces chicken broth
- 2 cups water
- Celery salt, to taste
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon dried basil
- 1/4 teaspoon sugar
- 1 1/2 cups heavy cream
- GARNISH:
- 4 to 6 pieces cooked bacon, chopped (save the grease and use with the butter)
- Chopped chives, as desired
- 2 cups Monterrey Jack / Cheddar cheese blend, shredded

- 2 cups. cooked quinoa
- 2 tablespoons pesto
- I tablespoon grated fresh Parmesan cheese
- I large egg
- Filling:
- 3 large eggs
- l/2 teaspoon kosher salt
- 114 teaspoon black pepper
- 1/2 cup skim milk
- 4 oz. goat cheese, cut into slices or coarsely crumbled
- 1/2 pound asparagus (about 12 medium stalks), tough ends trimmed and cut into 3" lengths
- 14 oz. can artichoke hearts, well drained aod gently squeezed dry
- Fresh basil, julienned, for serving

- 4 cans cannellini beans(2 cans drained)
- 1/4 cup extra virgin olive oil
- 1/2-1 medium onion chopped
- 2-3 cloves garlic chopped
- 4 oz pancetta or approx 4 slices bacon diced
- 6 cups chicken broth
- 1 cup crushed tomatoes
- 1 1/2 cups small pasta shells or ditalini uncooked
- 1 1/2 tsp kosher salt and pepper
- crushed red pepper flakes optional
- parmesan cheese optional
Salad

- 1 package romaine lettuce
- 1 package iceburg lettuce
- 1 package feta cheese (crumbled)
- 1 package craisins
- 1-1/2 cups walnuts (Chopped)
- Briana’s blush wine vinaigrette salad dressing (you can buy in publix)
