- 3 TO 4 TBSP CANOLA OIL
- 1/2 LB/250G MUSHROOMS, SLICED
- 1 CLOVE GARLIC, MINCED
- SALT AND PEPPER
- FOUR 6-0Z/175G FILETS MIGNON
- 1/2 CUP/I20 ML JAMESON (OR ANOTHER IRISH WHISKEY)
- 1/2 CUP/120ML HEAVY CREAM OR CREME FRAICHE
- 1/2 CUP/120ML BEEF STOCK
- 1 TBSP MINCED FRESH PARSLEY
Frozen Berries with Hot White Chocolate

Early in the day, spread the berries on a sheet pan in a single layer and place them in the freezer
- 2 half-pints fresh raspberries
- 2 half-pints fresh blueberries
- 1 pint fresh strawberries, hulled and sliced thick
- 1 cup heavy cream
- 10 ounces good white chocolate (not chips), chopped* 1/2 teaspoon pure vanilla extract
- *I use Callebaut or Lindt white chocolate. The chocolate can be melted early and then reheated over
- simmering water to 110 degrees. Don't overheat or the chocolate will separate and burn.
