Sweet Oven-Dried Tomatoes

These homemade oven-dried tomatoes are sweet, delicious and addictive
- 12 plum or Roma tomatoes
- Coarse kosher salt or sea salt, to taste
- 1 tbsp. chopped garlic
- 1 tsp. dried oregano
- Balsamic vinegar, for drizzling
- Olive oil, for drizzling
- Preheat oven to 175 degrees F.
Party Beef Casserole

In a large resealable plastic bag, combine the flour, salt and pepper; add beef in batches; shake to coat
- 3 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 pounds beef top round steak, cut into 1/2-inch cubes
- 2 tablespoons canola oil
- 1 cup water
- 1/2 cup beef broth
- 1 garlic clove, minced
- 1 tablespoon dried minced onion
- 1/2 teaspoon dried thyme
- 1/4 teaspoon dried rosemary, crushed
- 2 cups sliced fresh mushrooms
- 2 cups frozen peas, thawed
- 3 cups mashed potatoes (with added milk and butter)
- 1 tablespoon butter, melted

Coconut Mango Smoothie

- 1 cup coconut water
- 1/2 cup mango puree or juice
- 1 small banana
- 3/4 cup Greek-style vanilla yogurt

Pasta with Brown Butter, Tomatoes and Asparagus

In large skillet, melt butter over medium heat until foaming and nutty brown colour, about 2 minutes
- 1/4 cup butter
- 2 cloves garlic, minced
- 2 cups grape or cherry tomatoes
- 1 lb asparagus, trimmed and cut into 1-inch (2.5 cm) pieces
- 1/2 tsp each salt and pepper
- 4 cups dried gnocchi, farfalle or shell pasta
- 1/3 cup grated Parmesan cheese
- 2 tbsp chopped fresh parsley
Sausage Brunch Muffins

In a skillet over medium heat, brown sausage
- 1 pound bulk pork sausage
- 4 cups biscuit/baking mix
- 3/4 cup milk
- 1/2 cup water
- 1 can (4 ounces) diced green chilies, undrained
- 1 egg, beaten
- 1 can (11 ounces) whole kernel corn, drained
Chillies Stuffed with Beef

Preheat the grill to medium
- 4 large fresh poblano chillies
- plain flour, for dusting
- vegetable oil, for frying
- spicy beef filling
- 500 g/1 Ib 2 oz minced beef
- 1 onion, finely chopped
- 3 garlic cloves, finely chopped
- 4 tbsp dry or sweet sherry
- pinch of ground cinnamon
- pinch of ground cloves
- pinch of ground cumin
- salt and pepper
- 400 g/14 oz canned chopped tomatoes
- l-3 tsp sugar
- 1 tbsp vinegar
- 3 tbsp chopped fresh coriander
- 2-3 tbsp coarsely chopped toasted almonds

Herbed Spaetzle

Bring a pot of salted water to a bare simmer
- Kosher salt
- 3 cups all-purpose flour
- Freshly ground pepper
- Large pinch of freshly grated nutmeg
- 1 cup sour cream
- 1 cup seltzer
- 3 large eggs
- 1/3 cup chopped fresh dill and/or parsley
- 1 tablespoon whole-grain mustard (optional)
- 2 tablespoons plus 2 teaspoons extra-virgin olive oil
- 4 tablespoons unsalted butter
Oven Fried Mushrooms

1. Preheat oven to 220°C (450 °F); lightly grease a 37
- 25 mL (1/2 cup) all-purpose flour
- 2 mL (1/2 teaspoon) paprika
- 250 mL (1 cup) soft breadcrumbs
- 125 mL (1/2 cup) grated Parmesan cheese
- 10 mL (2 teaspoons) dried basil or oregano leaves crushed
- 2 eggs slightly beaten
- 30 mL (2 tablespoons) milk 2 - 227 g
- (8 ounce) packages Campbell's fresh mushrooms
- 50 mL (1/4 cup) butter or margarine, melted
- Dipping sauce (recipe follows)
Hearty Beef Goulash

Heat oil in heavy frypan; add bacon and cook until lightly browned; remove with a slotted spoon to a large pot
- 1 tablespoon oil
- 2 slices bacon, chopped
- 1 garlic clove, minced
- 2 carrots, sliced
- 2 medium onions, sliced
- 1 green pepper, sliced
- 1/4 pound whole small mushrooms
- 1-1/2 pound stewing beef, cubed

- 1 bay leaf
- 1 cup milk
- 1 tablespoon flour
