Asparagus Salad with Herbs & Parmesan Cheese

Cook asparagus in boiling salted water until just tender or microwave 2-3 min
- 4 lbs asparagus, cut diagonally into 3" lengths
- 1/2 C EVO
- 3 T lemon juice
- Coarse salt & ground pepper
- 1/2 C coarsely chopped chervil
- 1/2 C coarsely chopped mint
- 1/2 C coarsely chopped parsley
- 2 oz shaved Parmesan cheese
- Truffle oil (optional)
Roasted Broccoli & White Bean Salad

Preheat oven to 350. Cut broccoli into small florets
- 1 large head broccoli
- 3 oz. olive oil
- Salt & pepper
- 1 T minced garlic
- 1 t thyme
- 2 T minced shallots
- 2 oz. sherry vinegar
- 4 oz. olive oil
- 1 small can white beans, drained & rinsed
- 1 C chopped tomatoes
Escarole, Bean & Sausage Soup with Parmesan

Heat oil in large sauce over med-hi heat
- 2 t EVOO
- 1 chopped onion
- 1/2 C thinly sliced fennel bulb
- 1 T minced garlic
- 3 links Italian turkey sausage links, 2 mild, 1 hot, casings removed
- 2 C chicken broth
- 1 C water
- 15 oz can cannelloni beans, rinsed & drained
- 4 C chopped escarole
- 2 T grated Parmesan
Grilled Chicken Breasts with Asian Dipping Sauce

Finely chop garlic & sprinkle with 1 T of sugar to form paste
- Dipping Sauce:
- 2 cloves chopped garlic
- 1/4 C granulated sugar
- 1/3 C soy sauce
- 1/3 C Asian fish suace
- 1/3 C lime juice
- 1-2 jalapeno peppers, thinly sliced crosswise
- 2 T chopped scallion greens
- 2 T chopped cilantro
- 2 T chopped mint
- 1/4 C finely chopped unsalted dry roasted peanuts
- 1/2-3/4 C water
- Chicken:
- 4 large boneless chicken breasts halves
- Salt & pepper
Smoked Chicken Pizza with Red Pepper Pesto, May

Make red pepper sauce: Preheat oven to 350
- 1 head of garlic, top third sliced off & discarded
- 2 T EEO
- 1 red bell pepper
- 1/2 C basil leaves
- 1 T oregano
- Salt & pepper
- PIZZA
- Pizza dough
- 1/2 lb shredded chicken breast (@2 C)
- 1 small thinly sliced red bell pepper
- 6 oz shredded manchego cheese (@2C)
- 4 oz crumbled soft goat cheese
- Aragula for garnish
Golden Beet Salad with Avocado & Feta

- 1 t grated lemon rind
- 1 1/2 T lemon juice
- Salt & pepper
- 1 large thinly sliced shallot
- 2 T olive oil

- 1 sliced avocado
- 1 oz. (@ 1/4 C) crumbled feta cheese

- 6 slices bacon
- 2 C coarsely chopped basil
- 1 small garlic clove
- 1/4 C olive oil
- 1/2 t lemon juice
- Salt
- 4 skinless, boneless chicken breast halves, halved diagonally
- Ground pepper
- 1 C flour
- 2 large eggs, lightly beaten
- 1 C bread crumbs
- 2 T butter
- 2 T olive oil

- 1 T cumin seed
- 1/2 t whole black peppercorns
- 1/2 t fenugreek seeds
- 1/2 C cilantro leaves
- Juice of 1 lemon
- 2 cloves peeled garlic
- 2 scallions, cut into 1" lengths, 1 thinly sliced for garnish
