Chicken with Carrots & Olives

1. In large skillet, heat 2 T oil
- 1/4 C olive oil
- 1 1/2 lb. skinless, boneless chicken breasts, cut in 1 1/2" chunks
- Salt & pepper
- 1/2 lemon, seeded, sliced very thin
- 3 large carrots, very thinly sliced
- 3 large garlic cloves, thinly sliced
- 1 T water
- 1 t. ground cumin
- 1 t. paprika
- Pinch of cinnamon
- 1 C chicken stock
- 3/4 C mixed, herb-marinated pitted olives
- chopped roasted almonds
- couscous

In large boel, combine tomatoes, cheeses, butter, onion, garlic, salt & cayene
- 1 C drained, canned whole tomatoes
- 1 pkg. 8 oz. Cream cheese, softened
- 8 oz. grated Cheddar cheese (2C)
- 1/2 C softened butter
- 1/2 C chopped onion
- 2 cloves crushed garlic
- 1 t. salt
- 1/8 t. cayenne
- 8 oz. chopped walnuts

- 4 C old fashioned rolled oats
- 1 1/2 C slivered almonds
- 1 C pistachos
- 1 C coconut chips
- 1 t cinnamon
- 1 t salt
- 1/2 t cardanmom
- 3/4 C maple syrup
- 1/2 C olive oil
- 1/4 C packed brown sugar
- 3/4 C dried cherries

- 1 5 oz. can water packed tuna, well drained
- 1/4 C diced tomato
- 2 T minced red onion
- 1 T chopped Kalamata olives
- 1 T chopped dill
- 1 1/2 t red wine vinegar
- 1 t EVOO
- 1 slice prosciutto, finely minced
- Kosher salt & ground pepper
- 2-4 slices boule type bread
- 3 oz finely grated Comte, Emmentaler or Gruyere cheese

Spicy Lemon-Rosemary Pork Tenderloin

- Marinate 6 hrs.
- 6 T olive oil
- 1/4 C lemon juice
- 1/4 C rosemary leaves
- 2 T crushed red pepper
- 6 cloves chopped garlic
- 4 1lb pork tenderloins

Spring Peas with Mint

- 1 T red wine vinegar
- 2 C fresh peas
- 1/2 small red onion, diced
- 1 C loosely packed mint

- 1 lb. ground beef
- 1 chopped onion
- 1 clove minced garlic
- 3 T olive oil
- 1 8 oz. can tomato sauce
- 1 6 oz. can tomato paste
- 1/2 t celery salt
- 1/2 t caraway seeds
- 1/4 t crushed red pepper
- 1 bay leaf, crumbled
- 1 T chili powder
- 1/4 C fresh basil
- 1 1/2 t salt

- 1 t sesame seeds
- 1/3 C soy sauce
- 1/4 C rice vinegar
- 2 T water
- 1 clove minced garlic
- 1 scallion, thinly sliced
- Dumplings:
- 1/2 lb. ground pork
- 1/2 lb kimchi, drained & finely chopped
- 4 scallions, green parts only, thinly sliced
- 1 large beaten egg
- 2 T cornstarch
- 1/2 t sugar
- 1/2 T soy sauce
- 1/2 t kosher salt
- 1/4 t pepper
- 36 gyoza wrappers
- 2 T oil
- 1 C water
