Chocolate Frangelico Fondue

Combine first 3 ingredients in med
- 1/3 C half-and-half
- 1/4 C fat-free milk
- 8 oz chopped semisweet chocolate
- 1 1/4 C sifted powdered sugar
- 1/4 C water
- 2 T Frangelico
- 2 T corn syrup
- 4 C cubed angel food cake*
- 2 C sliced bananas
- 2 C quartered strawberries
- Other fruits cut in cubes can be substituted
Shrimp in Fragrant Green Sauce

In processor, combine cilantro, garlic & lemon juice; process to paste
- 2 C packed cilantro sprigs
- 2 cloves minced garlic
- 1 T lemon juice
- 1/4 C + 1 T olive oil
- Salt & pepper
- 1 1/2 lb. shrimp
- 3 thinly sliced scallions
- 1 minced jalapeño
- 1/4 C white wine
- 1 C V-8 juice
- 1 T butter
Sauteed Fava Beans

Shell beans by running edge of knife along seam
- Boiling water
- salt
- ice
- 2 lbs fava beans
- 1 T butter
- 1 t. olive oil
- 2 cloves minced garlic
- Salt & pepper
Pomegranate Jalapeño Glazed Ham

Preheat oven to 325. Place ham in large roasting pan; add chicken stock
- One 7 lb spiral ham (one ham steak for 3)
- 1 C chicken stock
- 20 whole cloves
- One 10 oz. jar jalapeno jelly
- 1 C pomegranate juice
- 2 T lemon juice
- 2 T Dijon mustard
- 1/4 t cinnamon
- 14 t ground ginger
Pepper Crusted Roast Beef with Rosemary Chimichurri

Season beef: In small bowl, mash oil, rosemary, salt, pepper & garlic with back of spoon
- Rosemary Chimichurri:
- 2 T evoo
- 2 1/2 t chopped rosemary
- 2 1/2 t kosher salt
- 1 clove minced garlic
- 3 lb. beef top loin roast
- 1/4 E V O O
- 1 t chopped rosemary
- 3 T white wine vinegar
- 1 T minced garlic, mashed to a paste
- 1/2 C chopped Italian parsley
- Kosher salt & pepper
Grilled Turkey, Apple & Cheddar Sandwiches

Combine parsley & grated apple
- 1/2 C flat leaf parsley
- 1 grated Granny Smith apple
- 8 slices multigrain bread
- 8 t mango chutney
- 4 slices sharp cheddar cheese
- 4 oz. sliced turkey
Flank Steak with Herbed Salsa

Light grill. In bowl combine tomatoes, scallion, cilantro, mint, jalapeño garlic & lemon juice
- 2 med. chopped tomatoes
- 4 finely chopped scallions
- 1 C finely chopped cilantro
- 1/2 C finely chopped mint leaves
- 1 seeded & minced jalapeño
- 1 clove minced garlic
- Juice of 1 lemon
- Salt & pepper
- 1 1lb flank steak
- 2 t olive oil
Broccoli Rabe with Pancetta & Garlic

Bring 2 qts of water to boil; add broccoli rabe & cook til tender, @ 5 min
- 2 lbs. broccoli rabe, cut into 2" pieces
- 2 T olive oil
- 4 ounces pancetta, cut into matchsticks
- 4 thinly sliced large garlic cloves
- Salt & pepper
Shrimp with Spicy Basil Sauce

Mix sauce ingredients. Use as dip for shrimp and serve cold
- 2 lbs large shrimp, cooked & chilled
- 1/2 C catsup
- 1 C loosely packed minced basil
- 1/4 C soy sauce
- 1 t. Worcestershire
- 1 t. hot pepper sauce
Strip Steak with Hoisin Sauce

For the sauce heat oil in med
- Sauce:
- 1 T olive oil
- 4 thinly sliced shallots
- 1/4 coarsely chopped cilantro
- 3 minced garlic cloves
- 1 T finely grated ginger
- 1/2 t crushed red pepper
- 1/2 C chicken broth
- 1/4 C hoisin sauce
- 3 T soy sauce
- 2 T honey
- Steak:
- 2 New York strip steaks
- 2 vidalia onions, cut into 1/2" rounds
