Chilled Cucumber Soup

In blender, combine chopped cucumbers, ice, water, olive oil, lemon juice & half each of jalapeño, mint; puree
- 4 4oz Persian cucumbers, 3 coarsely chopped, 1 peeled & diced
- 1/2 C ice cubes
- 1/4 C cold water
- 1/4 olive oil
- 1 t lemon juice
- 2 small jalapenos, seeded & minced
- 2 T shredded mint leaves
- Salt
- 1/2 C celery leaves
- 1/4 C plain Greek yogurt
- Extra virgin olive oil for drizzling
Italian Sausage Soup

Heat large skillet over med heat
- 8 oz. mixed hot & mild Italian turkey sausage
- 2 C chicken broth
- 1 14.5 oz.can crushed tomatoes
- 2 C baby spinach leaves
- 2 T grated Parmesan cheese
- 2 T chopped fresh basil
- 1/2 C cooked small shell pasta
Marinated Lamb Chops

Combine first 8 ingredients; add lamb chops, cover & marinate in refrigerator 8 hrs or overnight Preheat oven 450
- 1/4 C finely chopped cilantro
- 2 T chopped Italian parsley
- 2 T minced onion
- 2 T lemon juice
- 1 T olive oil
- 3/4 t paprika
- 1/2 t ground coriander
- 2 cloves minced garlic
- 8 trimmed 4 oz lamb loin chops
- Cooking spray
- Salt & pepper
Turkey Jasmine Rice Meatballs with Baby Bok Choy

To prepare meatballs, bring 1 C water to boil in small saucepan
- Meatballs:
- 1 C water
- 1/3 C uncooked jasmine rice
- 1/4 C breadcrumbs
- 1/4 C chopped green onions
- salt & pepper
- 1 1/4 lb ground turkey breast
- 2 large egg whites
- 1 clove minced garlic
- Cooking spray
- Bok Choy:
- 6 baby bok choy
- 2 t olive oil
- 1/4 c chopped green onions
- 1 T shredded ginger
- 1 clove minced garlic
- 1 C water
- 3/4 C chicken broth
- 3 T soy sauce
- 1 1/2 t sugar
- 1/2 t crushed red pepper
- 1 1/2 T dry sherry
- 2 t cornstarch
Ranch Oyster Crackers

Combine ranch dressing with dill & olive oil
- 1 oz. packet Ranch Dressing
- 3/4 t. dill weed
- 1/4 C olive oil
- 12 oz. package oyster crackers
Roasted Eggplant & Arugula Salad

Preheat oven 450. Pour 2T olive oil onto baking sheet & dip each strip of eggplant in oil to coat
- 5 T olive oil
- 1 1lb eggplant; peeled, sliced crosswise 1" thick & then cut into 4 strips
- Salt & pepper
- 2 T balsamic vinegar
- Arugula
Apples on Horseback

Preheat grill pan. Arrange pancetta slices on work surface & place an apple wedge & cheese stick in center
- 16 thin slices of pancetta
- 1 Pink Lady apple, peeled & cut into 16 wedges
- 3 oz Manchebo cheese, sliced 1/4" thick & cut into 2 x 1/2" sticks
- 16 rosemary sprigs or toothpicks as skewers
Skewered Kofte

In bowl cover bulgur with boiling water; let stand do minutes
- 1/4 C bulgur
- 1/2 C snipped parsley
- 1/4 finely chopped red onion
- 1/4 t crushed red pepper
- 1 t grund cumin
- 1/2 t salt
- 1/4 t ground allspice
- 1 lb ground lamb
- 1 10oz. can tomatoes with green chili peppers
- 3 T snipped parsley.
Shrimp Salad with Lime Zest

Bring large saucepan of salted water to boil
- 1 C kosher salt
- 6 C cold water
- 2 1/2 lbs shrimp, shelled
- 3 T heavy cream
- 1/2 C mayonnaise
- 1 1/2 t lime zest
- 1 1/2 T lime juice
- 1/4 C finely diced celery
- 2 T finely chopped dill
- 1 T thinly sliced garlic chives
- Salt & pepper
Roasted Potatoes with crispy Rosemary & Oregano

- 1 1/2 lb. halved baby potatoes
- 3 smashed garlic cloves
- 3 large sprigs oregano
- 2 large sprigs rosemary
