Heat grill. In bowl, whisk together vinegar, oil, garlic, thyme, mustard, salt & pepper until well blended
- 3 T white wine vinegar
- 3 T olive oil
- 2 cloves chopped garlic
- 1 T chopped thyme
- 2 t Dijon mustard
- 3/4 t salt
- 1/2 t pepper
- 1 lb. lean ground beef
- 1 egg, beaten
- 3/4 c Parmesan
- 1/2 c bread crumbs
- 8 baby artichokes
- 16 cherry tomatoes
Chicken Breasts with Rosemary & Thyme

Coat chicken breasts with oil
- 4 large rosemary sprigs
- 4 large thyme sprigs
- 4 chicken breasts halves
- 1/2 t crushed red pepper
- Salt & pepper
- 2 T olive oil
- 1/2 C chicken stock
- 1 t flour mixed with 2 t water
Butternut Squash Soup

Melt butter in large saucepan over med hi heat
- TOAST:
- 1 T butter
- 3 1/2 cubed butter nut squash ( @ 1/1/2 lbs.)
- 3/4 C chopped carrot
- 1 C chopped sweet onion
- 3 cloves minced garlic
- 2 1/2 C chicken broth
- 1/4 C half-and-half
- 1/4 t salt
- 4 slices French bread
- 3 oz. thinly sliced Swiss cheese
Ginger Lime Chicken Sandwiches

In med bowl whisk together cilantro, lime peel, lime juice, olive oil, honey & ginger
- 2 skinless, boneless chicken breasts halves
- 1/2 t coarse salt
- 1/4 t black pepper
- 1/4 C chopped cilantro
- 2 t shredded lime peel
- 3 T lime juice
- 2 T olive oil
- 2 T honey
- 1 - 2 T grated fresh ginger
- 1/4 C mayonnaise
- 1/2 t garlic chili sauce
- 4 hamburger buns
- lettuce leaves
Flourless Garbanzo Bean Chocolate Cake

Preheat oven to 350. Grease 9" round cake pan
- 1 1/2 C semisweet chocolate chips
- 1 can (19 oz.) garbanzo beans, rinsed & drained
- 4 eggs
- 3/4 C sugar
- 1/2 t baking powder
- 1 T vanilla
- 1 T confectioner's sugar for dusting
- Fresh raspberries for serving
Shaved Asparagus salad with Oranges & Pecorino

1. Using mandoline set over large bowl, shave asparagus lengthwise
- 2 lbs thick asparagus
- 1 1/2 oz shaved Pecorino
- 3 T orange juice
- 1 1/2 T snipped chives
- 1 1/2 t champagne vinegar
- 1/4 grated orange zest
- 1/4 C hazelnut oil
- 1 1/2 T grapeseed oil
- Salt & pepper
- 1 navel orange
- 2 T toasted hazelnuts, coarsely chopped
Lemon & Oregano-Rubbed Grilled Chicken

Prepare grill. Place each chicken breast half between 2 sheets of plastic wrap; pound to 1/4" thickness
- 4 skinless, boneless chicken breast halves
- 5 t grated lemon rind
- 1 T olive oil
- 1 1/2 t dried oregano
- 3/4 t kosher salt
- 1/2 t pepper
- 1/4 t water
- 2 cloves minced garlic
- Cooking spray
- 4 lemon wedges

- 1 1/2 T ginger

- Salad:
- 1 C each chopped romaine lettuce, watercress & napa cabbage
- 1/2 C halved cherry tomatoes
- 1/2 C diced cucumber
- 1/4 C sliced water chestnuts
- 1/2 C julienned sugar snap peas
- 1/4 C sliced scallions

Grilled Sausage with Summer Squash, Fresh Herbs & Olives

- 1 lb Italian sausage links
