Indian Spiced Chicken with Lime & Cilantro

Ingredients

  • 1 T coriander seed
  • 1 T cumin seed
  • 1/2 t whole black peppercorns
  • 1/2 t fenugreek seeds
  • 1/2 C cilantro leaves
  • Juice of 1 lemon
  • 2 cloves peeled garlic
  • 2 scallions, cut into 1" lengths, 1 thinly sliced for garnish
  • 1 1/2 T olive oil
  • 1 1/4 t Kosher salt
  • 1 t tumeric
  • 6 bone-in chicken breasts
  • Lime wedges for garnish

Preparation

Step 1

In small, dry skillet over med-lo heat toast coriander & cumin, shaking pan until cumin seeds darken & become fragrant, @ 5 min. Transfer to spice grinder, add peppercorns & fenugreek & grind to a powder
Combine cilantro, lime juice, garlic, 1" scallion pieces, olive oil, salt, tumeric & ground spice in blender and puree.
Place chicken in large bowl, add marinade; turn to coat. Set aside while grill heats or marinate in refrigerator up to 24 hrs
Place chicken on heated grill & sprinkle with salt. grill @ 20 min. or until thermometer reads 165.
Arrange chicken on serving platter & garnish with cilantro leaves, sliced scallion & lime wedges
