Grilled Steak with Caper Sauce

In med. bowl mix parsley, oil, capers, vinegar, garlic, 1 t salt & pepper Heat grill to med-hi
- 2 C chopped flat leaf parsley
- 1/2 C olive oil
- 1/4 C chopped capers
- 2 T red wine vinegar
- 1 chopped clove garlic
- Kosher salt & pepper
- 3 strip steaks
Grilled Swordfish with Peach & Black Bean Salsa, July

Preheat grill. In med. bowl, toss first 9 ingredients with 1/2 of lime juice
- 2 peaches or nectarines, diced
- 1 diced kiwi fruit
- 1/2 diced red bell pepper
- 15 oz. black beans
- 1/3 C chopped cilantro
- 2 sliced scallions
- 2 t honey
- salt & pepper
- 1/4 t Tabasco
- Juice of lime, divided
- 1 lb. swordfush
Grilled Asparagus with Caper Vinaigrette

Preheat grill. Place asparagus in shallow dish
- 1 1/2 lb asparagus spears
- 3 T olive oil, divided
- 1/2 t Kosher salt
- 1 t red wine vinegar
- 1/2 t Dijon mustard
- 1/4 t black pepper
- 1 clove minced garlic
- 2 t coarsely chopped capers
- 1/4 c basil leaves
Warm Brussel Sprouts with Honey, Caraway & Lime

Preheat oven to 425. In large bowl toss brussels sprouts with olive oil & season with salt
- 2 lbs brussels sprouts, halved lengthwise
- 3 T EVO
- Kosher salt
- 1/4 t caraway seeds
- 1/4 C shredded carrot
- 2 T lime juice
- 2 T honey
- 1 minced clove garlic
- 1/4 thinly sliced scallions
- 1/4 C chopped mint
- 1/4 C chopped cilantro
- 1 jalapeño pepper, thinly sliced
Asian Chicken & Rice Noodle Salad

Light grill. In large bowl, stir vinegar, sugar, jalapenos, & 1 1/2 t
- 1/3 C white vinegar
- 3 T sugar
- 2 minced jalapeños
- Kosher salt
- 2 grated carrots
- 1 fennel bulb, cored & thinly sliced
- Olive oil
- 1 lb. chicken breasts
- Ground pepper
- 4 oz thin rice noodles (vermicelli)
- 4 C thinly sliced napa cabbage
- 1 T Sesame oil
BBQ Grilled Salmon

For the sauce: Heat olive oil in small saucepan over med-hi heat
- For the sauce:
- 1 1/2 T olive oil
- 3 med. seeded, minced jalapeños
- 2 large minced garlic cloves
- 2/3 C rice wine vinegar
- Juice of 1 lemon
- Juice of 1 lime
- 1 1/2 C bbq sauce
- 3 T honey
- thinly sliced mint leaves
- For the salmon:
- 3 large minced garlic cloves
- 1 T minced ginger
- 2 T brown sugar
- 1/2 t Old Bay seasoning
- Salt & pepper to taste
- 2 T olive oil
- 1 large salmon filet (@ 2 1/2 lbs)
Holiday Green Beans

Heat oil in large skillet over hi heat
- 2 T olive oil
- 1 C diced onion
- 1 clove minced garlic
- 1 lb green beans
- 2 T water
- Salt
- 1/4 T lemon zest
- 1 T chopped parsley
- 1/2 C slivered almonds
Italian Seasoned Chicken Breasts

- 1 T chopped rosemary
- 1 t. grated lemon rind
- 2 T lemon juice
- 4 t. olive oil
- 1/2 t crushed fennel seeds
- 1/2 t salt
- 1/4 t pepper

- 4 chicken breasts
Chimichurri Vegetables

Cover potatoes in saucepan with 1" cold water
- 16 small red potatoes
- 1/3 C EVOO
- 1/4 red wine vinegar
- 1/2 t salt
- 3 finely chopped large garlic cloves
- 1 C chopped parsley
- 1/4 C chopped cilantro
- 2 med. zucchini sliced into 1" pieces
- 2 med yellow squash sliced into 1" pieces
- 1 small red onion cut into 1" wedges
