Grilled Asparagus with Caper Vinaigrette

  • 1 1/2 lb asparagus spears
  • 3 T olive oil, divided
  • 1/2 t Kosher salt
  • 1 t red wine vinegar
  • 1/2 t Dijon mustard
  • 1/4 t black pepper
  • 1 clove minced garlic
  • 2 t coarsely chopped capers
  • 1/4 c basil leaves

Step 1

Preheat grill.
Place asparagus in shallow dish. Add ! t olive oil& salt, tossing well to coat. Place on grill rack coated with cooking spray; grill 4 min on one side, turn & grill another 2 min.
Combine remaining salt, vinegar & next 3 ingredients; stir with whisk. slowly pour remaining olive oil into vinegar mixture, stirring constantly. Stir in capers. Drizzle over asparagus.
