- Dash of salt
- 2 cloves garlic
- 3 T olive oil
- 8 1/2 " thick slices of French bread
- 6 halved medium tomatoes
- Salt & pepper
- 2 oz. proscuitto slices
- 1/2 C chopped green olives
Chicken Saltimbocca

Season chicken with salt & pepper
- 46oz.4 6oz. skinless, boneless chicken breast halves, butterflied & lightly pounded
- Salt & pepper
- 8large8 large sage leaves
- 4slices4 slices Prosciutto
- Flour for dusting
- 2T2 T olive oil
- 4T4 T butter, cut into tablespoons
- 1/4C1/4 C + 2 T dry white wine
- 1C1 C chicken stock
French Style Shrimp Salad

Prepare vinaigrette by processing garlic til minced
- Vinaigrette:
- 6 garlic cloves, halved
- 2/3 C chicken broth
- 1/4 C chopped basil
- 1/4 C chopped parsley
- 2 T lemon juice
- 2 T tarragon vinegar
- 2 T olive oil
- 2 t Dijon mustard
- 1/2 t black pepper
- Salad:
- 2 lbs large shrimp
- 12 small red potatoes, @ 3/4 lb.
- 1/2 lb haricots verts
- Cooking spray
- 5 C gourmet salad greens
- 4 C torn romaine
- 1 C sliced red pepper
- 3 med. tomatoes cut into wedges
- 1 Can quatered artichoke hearts
- 3 hard cooked eggs, sliced in quarters
- 1/2 C nicoise olives
- 2 T capers
Molten Spiced Chocolate Cabernet Cakes

Preheat oven to 425 Biutter 4 6oz custard cups Microwave chocolate & butter in large bowl 1 min
- 4 oz.semi-sweet baking chocolate
- 1/2 C (1 stick) butter
- 1 T Cabernet Sauvignon or other red wine
- 1 t pure vanilla
- 1 C confectioner's sugar
- 2 eggs + 1 yolk
- 6 T flour
- 1/4 t cinnamon
- 1/4 t ground ginger
Hamburger Soup

In Dutch oven, cook ground beef, breaking up meat, til browned
- 1 lb. ground beef
- 1 T olive oil
- 1 C minced onion
- 1 clove minced garlic
- 1 C diced carrots
- 1 C sliced clelery
- 29 oz. chicken broth
- 1 16 0z. can crushed tomatoes
- 1/2 t thyme
- 1/2 t salt
- 1/4 t pepper
- 3 C cooked noodles
- 1/4 C chopped parsley
