Shrimp & Papaya Salad

Ingredients

  • 1 lb. shrimp
  • 2 T olive oil
  • 1 1/2 T lime juice
  • 1/2 t lime zest
  • 1 jalapeno, finely chopped
  • Salt
  • 1 seeded & chopped small papaya
  • 1/2 sliced small red onion
  • 1 rib celery, sliced diagonally
  • 1 bunch watercress
  • 1/2 C cilantro
  • 1/4 C salted cashews, coarsely chopped

Preparation

Step 1

Cook shrimp & plunge in ice water to cool; drain & pat dry.
In large bowl, whisk olive oil with lime juice, lime zest, jalapeno & salt. Add papaya, onion, celery, watercress, cilantro & shrimp; toss gently. Scatter cashews on top & serve.
