In med. bowl whisk together marinade ingredients
- Marinade:
- 1/4 C + 1 T fresh lemon juice
- 3 T soy sauce
- 1 T olive oil
- 1/2 t brown sugar
- 1/4 t chopped rosemary
- 1/4 t kosher salt
- 1/4 t ground black pepper
- 4 prok rib chops
Broccoli with Olives, Garlic & Lemon

Trim broccoli into 2-3" florets
- 1 1/2 lb. broccoli crowns
- 1/3 C olive oil
- 1/3 Kalamata olives
- 1 clove chopped garlic
- 1/2 t oregano
- Salt & pepper
- 1 lemon
- 1 1/2 T chopped oregano
Asian Marinated Chicken with Corn & Basil Faux-Fried Rice

To prepare chicken, place first 4 ingredients in zip-lock bag
- Rice:
- 1/3 C sliced green onions
- 3 T soy sauce
- 2 T mirin
- 2 t minced garlic
- 8 skinless chicken, bone-in chicken thighs
- 1 T olive oil
- 1/2 C uncooked basamati rice
- 1 T olive oil
- 2 T thinly sliced green onions
- 3/4 C fresh yellow corn kernels
- 1 T soy sauce
- 1/4 C chopped basil
- 1 lime
Veal Chops with Tomato & Green Mango Salad

Season veal chops with salt & pepper
- 3/4 C olive oil
- 4 veal rib chops
- Salt & pepper
- 1/2 C parsley, 1/4 C chopped
- 2 cloves minced garlic
- 1 t thyme leaves
- 4 med heirloom tomatoes, sliced 1/2" thick
- 2 Vidalia onions, separated into 1/2" rings
- 1 C basil
- 1/4 C cider vinegar
- 1/4 t sugar
- 1 large green mango, finely shredded
Fig & Chile-Glazed Pork Tenderloin

Prepare grill to med-hi heat
- 1/2 C fig preserves
- 1/4 C rice vinegar
- 1 T chile paste with garlic
- 1 T soy sauce
- 1/2 t kosher salt, divided
- 2 1 lb. pork tenderloins, trimmed
- 1/2 t pepper
- Cooking spray
- Fresh chives, cut into 1" pieces
Roasted Red Pepper Humus

Combine first 4 ingredients in bowl of food processor; process until mixture is smooth
- 2 cloves minced garlic
- 1 15 oz. can garbanzo beans
- 1/3 C olive oil
- 1/3 C lemon juice
- 1/2 C roasted red peppers
- 1/4 t dried basil or fresh basil leaves
Warm Succotash Salad

1. In med bowl, combine lemon juice, thyme, mint, garlic, lemon zest & sugar
- 2 T lemon juice
- 1 1/2 t minced thyme
- 1 1/2 t minced mint
- 1 clove minced garlic
- 1/2 t lemon zest
- 1/2 t sugar
- 1/3 C + 1 T olive oil
- Salt & freshly ground pepper
- 2 oz. mesclun ( 4 C)
- 1/4 C halved cherry tomatoes
- 1 1/2 C cron kernels
- 1 C lima beans or shelled edamame
- 1 finely diced red pepper

- 1 C plain yogurt
- 1/2 cucumber with peel, sliced
- 2-4 sprigs fresh mint
- 2 cloves garlic
- 2 T olive oil
- 1/4 tsp. salt
- 1 small red sliced onion
- Juice of 1 lemon
- 24 cherry tomatoes
