- 8 slices bacon
- 1 T olive oil
- 2 celery ribs, thinly sliced
- 1 onion, thinly sliced
- 1 leek, thinly sliced
- 5 C chicken stock
- 2 rosemary sprigs
- Salt & pepper
- 1/2 lb sugar snap peas, thinly sliced
- 2 10 oz boxes frozen peas
- 1/4 C parsley
- 1 C heavy cream or evaporated milk
- 1 clove minced garlic
Indian Spiced Chicken Salad Sandwiches

- 4 8 oz skinless, boneless chicken cutlets
- 1 T olive oil + more for brushing
- 2 t curry powder or curry paste

- 6 whole wheat pita brads, top thirds trimmed off

Soy-Ginger Flank Steak with Grilled Eggplant

- 2 lbs. flank steak
- 1/2 C soy sauce
- 1/4 C + 2 T lime juice
- 2 T grated ginger
- 1/4 C olive oil

Pork Chops with Tangy Red Currant Sauce

- 1/2 C diced white onion
- 3 T minced garlic
- 1/2 C red wine Or Chicken stock
- 2 T sugar
- 2 T red currant jelly
- 1/4 C red wine vinegar

- 1 lb bonless skinless turkey breasts steaks
- 1/4 C tomato juice
- 2 T olive oil
- 1/4 t dried oregano

Carrot & Chili Pepper Soup

In large saucepan, combine vegetable broth, carrots, onions, chili peppers, chili powder & cumin
- 29 oz vegetable broth
- 16 oz peeled baby carrots
- 1 large chopped onion
- 4 oz diced green chilies
- 1 t chili powder
- 1/2 t ground cumin
- 1 C lite half & half
- Fresh purple basil leaves
Roasted Asparagus with Olive Vinaigrette
