Hot Dogs with Green Tomato Relish

Make relish: In a colander, toss green tomatoes, red bell pepper & onion with 2 T Kosher salt
- Relish:
- 1 lb.green tomatoes, cut into 1/2" dice
- 1 red bell pepper, cut into 1/2" dice
- 1 onion, cut into 1/2" dice
- Kosher salt
- 1/4 C+ 2 T olive oil
- 1 C distilled vinegar
- 1 C light brown sugar
- 2 dashes crushed red pepper
- 1/2 t ground cloves
- 1/2 celery salt
- 1/2 t ground ginger
- Hot dogs:
- 3 C water
- 1 12oz bottle/can of beer
- 1 T celery seeds
- 1 small quartered onion
- 1 clove smashed garlic
- 8 all beef hot dogs
Chunky Tomato Soup

In large pot, melt butter with olive oil
- 2 T butter
- 2 T olive oil
- 1 large coarsely chopped white onion
- 4 med. diced shallots
- Salt & pepper
- 3 28oz. cans crushed plum tomatoes
- 4 C chicken broth
- 1 bay leaf
- 1 t hot pepper flakes
- 1 T balsamic vinegar
Romano Bean Salad

Cook beans with 1 T kosher salt & garlic
- 1 lb. romano or green beans, cut in 1/2" pieces
- 1 T kosher salt
- 1 garlic clove
- 1/4 chopped parsley
- 2 T capers
- 1 T olive oil
- 1 t grated lemon rind
- Salt & pepper
Grilled Asparagus with Manchego

Heat grill to med-hi. In large bowl, toss asparagus with oil, 1/2 t salt & pepper
- 2 bunches asparagus, @ 2 lbs.
- 1 T olive oil
- Kosher salt & pepper
- 2 oz. manchego, shaved
- 1/2 t paprika
Orecchiette with Sausage & Cherry Tomatoes

- 1/4 C olive oil
- 3/4 Sweet Italian sausage (hot if you like spicy), casings removed
- 1 pint cheery tomatoes, halved
- 1/2 t crushed pepper
