Heat oven to 375. Cook onion tops in boiling water for 2 minutes
- 8 green onion tops
- 2 tsp olive oil
- 3/4 lb ground round
- 8 oz package fresh spinach
- 1/2 cup (2 oz) crumbled feta cheese
- 1/4 cup pine nuts, toasted
- 1/4 tsp salt
- 1/4 tsp black pepper
- Dash of paprika
- Dash of ground cinnamon
- 8 sheets of frozen phyllo dough, thawed
- 4 tsp butter, divided and melted
Smothered Pork Chops

Sprinkle the pork chops all over with salt and the Cajun seasoning
- 4 bone-in center-cut pork chops
- 1/2 tsp Cajun seasoning
- 3/4 cup AP flour
- 2 TBSP EVOO
- 1 TBSP unsalted butter
- 1 large onion, sliced 1/4 inch thick
- 8 oz sliced mushrooms
- 1 TBSP fresh thyme, chopped
- 1 1/2 cups chicken broth
- 2/3 cup buttermilk
Cheese Straw Tomato Tartlets

CRUST: Pulse first 3 ingredients on a food processor 3 or 4 times or til combined
- CRUST:
- 2 1/2 cups AP flour
- 1/2 tsp kosher salt
- 1/4 to 1/2 tsp dried crushed red pepper
- 3/4 cup cold butter, cut into pieces
- 1 1/2 cups shredded sharp white cheddar cheese
- 1/2 to 3/4 cup ice-cold water
- FILLING:
- 2 pt red and yellow cherry or grape tomatoes, cut in half
- 3 garlic cloves, minced
- 2 TBSP chopped fresh basil
- 1 TBSP chopped fresh oregano
- 1 TBSP chopped fresh flat-leaf parsley
- 2 TBSP red wine vinegar
- 2 TBSP EVOO
- 1 tsp kosher salt
- 1/4 tsp black pepper
- Shaved Parmesan or crumbled feta

- 14 oz sweetened shredded coconut
- 2 large egg whites

- 1 lb package dried black beans
- 3 qts water
- 3 chicken bouillon cubes
- 1/2 small onion, diced
- 1/4 small red bell pepper, diced
- 6 garlic cloves, minced
- 2 TBS olive oil
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1 1/2 tsp sugar
- 1 tsp salt
- 1/2 tsp black pepper
Green Bean Casserole-Homemade

Heat oven to 375. Bring a large pot of water to a boil, season with 2 TBSP salt, and blanch the beans for 5 minutes
- 1 1/2 lbs green beans, trimmed
- 3 TBSP butter
- 2 shallots, chopped
- 1/2 lb button mushrooms, chopped
- 3 TBSP flour
- 1 cup chicken stock
- 1 cup half-and-half
- 1 can fried onions
Baked Couscous with Summer Squash and Herbs

Heat oven to 400. Bring 1 cup of chicken broth to a boil in medium saucepan
- 1 (14 oz) can chicken broth, divided
- 3/4 cup uncooked couscous
- 2 cups sliced yellow squash
- 1/2 cup sliced green onions
- 2 tbsp chopped fresh basil
- 1 tbsp chopped fresh oregano
- 1 minced garlic clove
- 1/4 cup shredded fontina cheese
- 1/4 cup grated Parmegiano-Reggiano cheese
- 1 egg
- 1/4 tsp salt
- 1/4 tsp black pepper
All American Quiche

- 1 (8 oz) pack cream cheese
- 1 cup milk
- 1/4 cup chopped onion
- 1 TBS butter
- 4 eggs, beaten
