Potato-Onion Gratin

Heat 2 tbsp oil in large skillet over medium high heat
- 3 tbsp olive oil, divided, plus more for brushing
- 4 cups thinly sliced onions
- 3 large garlic cloves, chopped
- 1 tbsp chopped fresh thyme
- 1 tbsp chopped fresh rosemary
- 2 lbs Yukon Gold potatoes, peeled & sliced into thin rounds
- 3/4 tsp salt
- 3/4 tsp black pepper
- 1 1/4 cups chicken broth
Beef and Spinach Taquitos

Heat oven to 400. Spray a nonstick baking sheet with cooking spray
- 3 TBSP olive oil
- 1 large onion, minced
- 1 TBSP kosher salt
- 1/4 tsp freshly ground black pepper
- 1 lb. ground chuck
- 1 TBSP ground cumin
- 2 packed cups baby spinach leaves, chopped
- 1 can black beans, rinsed and drained
- 1 cup mascarpone, at room temp (8 oz)
- 18 6 1/2-inch-diameter extra-thin or regular corn tortillas
- 1/4 cup olive oil
- 1 cup shredded sharp cheddar cheese

Baked Black Beans with Chorizo

- 1 TBSP olive oil
- 1/2 cup diced Spanish chorizo
- 1 1/2 cups chopped onion
- 1 jalapeno pepper, sliced
- 1/2 tsp salt
- 1/2 tsp ground cumin
- 1/4 tsp ground red pepper
- 5 garlic cloves, minced
- 3/4 cup chicken broth
- 2 (15 oz) cans black beans, drained and rinsed
- 1 cup chopped tomato
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup thinly sliced green onions
Grown Up Mac and Cheese

Preheat oven to 400. Place a baking rack on a sheet pan and arrange bacon in 1 layer on the rack
- 4 oz thick sliced bacon
- 2 cups elbow macaroni
- 1 1/2 cups milk
- 2 TBSP unsalted butter

- 5 oz Gruyere cheese, grated
- 4 oz extra-sharp cheddar, grated

Grilled Pineapple-Avocado Salsa

- 1 TBSP olive oil
- 1 TBSP honey
- 1 pineapple, peeled, cored and cut into 1/2-inch-thick slices
- 1/3 cup finely chopped red onion
- 1/4 cup minced fresh parsley
- 1 TBSP fresh lime juice
- 1/2 tsp salt
- 1/2 tsp ground red pepper

- 1 serrano chili, minced

Margarita Pork Tenderloin

- 2 lb pork tenderloin
