Black Bean Soup

Ingredients

  • 1 lb package dried black beans
  • 3 qts water
  • 3 chicken bouillon cubes
  • 1/2 small onion, diced
  • 1/4 small red bell pepper, diced
  • 6 garlic cloves, minced
  • 2 TBS olive oil
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 1/2 tsp sugar
  • 1 tsp salt
  • 1/2 tsp black pepper

Preparation

Step 1

Wash beans and remove debris. Soak beans in water to cover 8 hrs or overnight. Rinse and drain beans. Bring beans, water and bouillon to a boil. Cover, reduce heat to low and simmer 3 hrs. Do not drain.
Saute onion and bell pepper in hot oil over medium high heat for 5 minutes; add garlic and saute for 1 minute. Add onion mix to the beans. Add oregano, cumin, sugar, salt and pepper. Simmer, uncovered, 11/2 to 2 hrs.
