Ingredients

  • 1 1/2 lbs green beans, trimmed
  • 3 TBSP butter
  • 2 shallots, chopped
  • 1/2 lb button mushrooms, chopped
  • 3 TBSP flour
  • 1 cup chicken stock
  • 1 cup half-and-half
  • 1 can fried onions

Step 1

Heat oven to 375.
Bring a large pot of water to a boil, season with 2 TBSP salt, and blanch the beans for 5 minutes. Shock the beans in a bowl of ice water, then remove and set aside to dry.
Melt the butter in a Dutch oven over medium-high heat. Add the shallots and cook til lightly browned. Add the mushrooms and some salt and pepper. Cook til just softened. Add the flour and stir to coat the mushrooms and shallots. Add the stock, whisking to smooth out any lumps. Whisk in the half-and-half. Bring to a simmer and cook for 3 minutes. Check the seasoning and add salt and pepper as needed. Add the beans, then pour into a 9x13 inch baking dish.
Bake for 25 minutes. Sprinkle on the fried onions and cook for 5 more minutes. Let rest 5 minutes before serving.
