Easy Cauliflower and Broccoli Au Gratin

Place cauliflower and broccoli in 2 L microwaveable dish
- 1 lb. large cauliflower florets
- 1 lb. large broccoli florets
- 1/2 cup water
- 1/2 cup phili light cream cheese spread (1/2 of 250g. tub)
- 1/4 cup skim milk
- 1/2 cup light sour cream
- 1 1/2 cups shredded cheddar cheese
- 10 ritz crackers, crushed
- 3 tbsp. grated parmesan cheese
Grilled Salmon Fillets

On plastic cutting board, slice salmon fillet into 4 pieces
- LEMON DILL MARINADE:
- 1 lb.salmon fillet skin on (500g)
- 1/3 c (75ml.) olive oil
- 1/4 c. (50ml.) lemon juice
- 2 tbsp. (25ml.) chopped fresh dill (or 2 tsp./10ml. dried dillweed)
- 1 tsp. (5ml.) grated lemon rind
- 1/4 tsp. (1ml.) each salt and pepper
Potato and Cheddar-Cheese Soup

In a large saucepan, cook the bacon over moderate heat until crisp
- 1/4 lb. sliced bacon, cut crosswise into thin strips
- 1 large onion, chopped
- 3 pounds baking potatoes (about 6), peeled and cut into 1 inch cubes
- 4 1/2 cups water
- 1 tsp. salt
- 6 oz. cheddar, grated (about 1 1/2c)
- 1/4 cup chopped chives
Chicken Caesar Pasta Salad

Cook the pasta until done (to your taste) Rinse with cool water and drain well
- some bow tie pasta; cooked, rinsed with cool water, drained
- some caesar saled dressing
- some grilled chicken chunks or strips, grilled at home
- some romaine lettuce leaves
- some tomato chunks
- some bacon bits
- some croutons
- some parmesan cheese, shredded
Grilled Spare Ribs with Barbecue Sauce

- 2 slabs pork spare ribs (2 1/2 pounds each)
- 2 tbsp. chili powder
- coarse salt and grouond pepper
- 1 tbsp. butter
- 1/2 small onion, grated
- 2 garlic cloves, minced
- 1 1/2 c. ketsup
- 1/3 c. cider vinegar
- 2 tbsp. worcestershire sauce
- 1/4 tsp. cayenne pepper
Mexicana Grilled Fish Tacos

Squeeze juice from 1 lime into small bowl
- 2 1/2 limes, divided
- 1/4 cup kraft extra virgin olive oil aged vinaigrette dressing
- 1 tsp. chili powder
- 4 tilapia (1 lb./ 450g)
- 1/4 cup miracle whip made with olive oil spread
- 1 small clove garlic, minced
- 1/4 tsp. hot pepper sauce
- 8 small corn tortillas
- 2 1/2 cups shredded cabbage
- 1/2 cup thinly sliced red onion
- 1 jalapeno pepper, seeded, finely chopped
- 1 cup kraft creamy Mexicana shredded cheese with a touch of Philadelphia
- 1/2 cup chopped fresh cilantro
Mac 'n Cheeseburger Casserole

- 1 lb. (500g.) extra lean ground
- 2 c. (500ml.) sliced mushrooms
- 1 c. (250ml.) chopped red and yellow peppers
- 1/2 c. (125ml.) each, chopped onions and chopped celery
- 1 can (140z.) stewed tomatoes, undrained
- 1 can (284ml.) cream of mushroom soup
- 2 c. (500ml.) uncooked whole wheat elbow pasta
- 2 tbsp. (30ml.) worcestershire sauce
- 1 tbsp. (15ml.) chili powder
- 1/4 c. (60ml.) shredded sharp cheddar cheese
Friday Night Cheese Fondue

In a small saucepan, whisk together milk, garlic, flour and mustard
- 1 1/2 cups (375ml.) milk
- 1 clove garlic, minced
- 2 tbsp. (30ml) all purpose flour
- 1 tsp. (5ml.) dry mustard or Dijon mustard
- 2 cups (500ml.) shredded old cheddar
- 4 cups raw vegetable pieces (celery sticks, baby carrots, cauliflower florets, sweet pepper strips, broccoli florets,etc.)
- 2 cups (500ml.) strips cooked chicken breast and/ or large cooked shrimp
- 4 slices whole grain bread, toasted and cut into cubes
Steak Stuffed Garlic Bread

Slice the steak in half lengthwise then season all of the sides with the salt and pepper
- 3 tbsp. canola oil
- 1 lb. rib eye steak
- 3/4 tbsp. salt
- 1/2 tbsp. freshly ground pepper
- 2 tbsp. butter
- 2 sprigs rosemary
- 2 cloves garlic, smashed
- 1 baguette
- 4 tbsp. melted butter
- 2 tbsp. chopped garlic

Cranberry Habanero Cheese Puffs

- 1 pkg. (8 oz.) hot habanero cheese, cut into 16 cubes
- 3 tbsp. orange marmalade
