Grilled Salmon Fillets

Ingredients
- LEMON DILL MARINADE:
- 1 lb.salmon fillet skin on (500g)
- 1/3 c (75ml.) olive oil
- 1/4 c. (50ml.) lemon juice
- 2 tbsp. (25ml.) chopped fresh dill (or 2 tsp./10ml. dried dillweed)
- 1 tsp. (5ml.) grated lemon rind
- 1/4 tsp. (1ml.) each salt and pepper

Step 1
On plastic cutting board, slice salmon fillet into 4 pieces. If necessary, remove any bones with tweezers. Measure thickest portion of fillet to determne cooking time.
Lemon dill marinade: In bowl whisk together olive oil, lemon juice, dill, lemon rind, salt and pepper; pour into a shallow glass dish. Add fillets and, using tongs, turn to coat evenly. Cover with plastic and marinate for up to 30 minutes in refrigerator, turning occasionally.
Reserving marinade, place fillets skin side down, on greased grill 4 - 6 inches from medium hot coals.
Grill fillets, basting frequently and using all the marinade, for 10 minutes per inch of thickness.
Turn fillets over halfway through cooking by placing one metal spatula under fillet and another on top.
Cook fillets just until fish flakes easily when tested with fork and flesh is opaque.
