Firehouse Chili

Heat oil in a largepot. Brown together ground beef, onion and garlic; drain well
- 2 tablespoons vegetable oil
- 1 1/2 lbs. ground beef (or ground turkey)
- 1 large onion, chopped
- 1 fresh garlic clove, minced
- 1 1/2 tsp. salt
- 1/4 tsp. cayenne
- 1/4 tsp. ground cumin
- 1/4 tsp. ground oregano
- 2 tablespoons chili powder
- 2 - 8 oz. cans Ro-Tel tomatoes, undrained
- 1 - 8 oz. can tomato sauce
- 2 - 16 oz. cans dark red kidney beans, undrained
- 5 1/2 oz. tomato juice
Pineapple Sweet 'n Sour Chicken

Drain pineapple, reserve 2 tablespoons juice
- 1 20 oz. can Dole Pineapple Chunks
- 1 medium green or red bell pepper, cut into chunks
- 1 medium onion, cut into chunks
- 1/2 cup sliced mushrooms
- 2 tablespoons vegetable oil
- 1 lb. boneless, skinless chicken, cut into 1" pieces
- 1 cup prepared sweet and sour sauce
- 2 tablespoons soy sauce
- Hot cooked rice
Baked Salmon with Green Beans and Pesto

Preheat oven to 400 degrees
- 2 handfuls of green beans
- 2 salmon fillets (4 oz. each) skin on, scaled and bones removed
- Olive oil, as needed
- Sea salt and freshly ground black pepper
- 1 lemon
- 2 heaping tablespoons green pesto
Chicken or Turkey Casserole

Preheat oven to 350 degrees
- 1 package Knorr Rice Sides - Chicken Flavor
- 2 cups cut-up cooked chicken OR turkey
- 1/2 cup dried cranberries
- 1 1/2 cup seasoned cube stuffing mix
- 1/2 cup water
Marinated Mushrooms

- Marinade:
- 1 lb. mushroom caps
- 3/4 cup vegetable oil
- 3/4 cup red wine vinegar
- 1/4 cup chopped onions
- 1/8 cup chopped parsley
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon sugar

- 8 oz. angel hair pasta, cooked and drained

- Pepperidge Farm Bread
- 3/4 stick butter
- 3/4 cup brown sugar
- 5 or 6 eggs
- 1 1/4 cups milk

- 1 cup Italian salad dressing
- 4 skinless, boneless chicken breast halves

- 1/2 cup drained marinated sun-dried tomatoes sliced OR 1 cup cherry tomatoes cut in half

- 2 firm-ripe Ajnou pears, peeled, cored and quartered
- 1 teaspoon coarse salt
- 3/4 cup water
- Pepper to taste
