Bang Bang Shrimp

Mix mayonnaise with Thai Sweet Chili Sauce
- 1/2 cup mayonnaise
- 1/4 cup Thai Sweet Chili Sauce
- 3 drops Sriracha Hot Chili Sauce (or to taste)
- 1 pound shelled and deveined shrimp
- Dry cornstarch
- oil for frying
- lettuce
- chopped scallions
Mini Pumpkin Breads

Heat oven to 350ºF. Grease bottoms only of 11 miniature loaf pans, 4 1/2x2 3/4x1 1/4 inches
- 1 2/3 cups sugar
- 2/3 cup vegetable oil
- 2 teaspoons vanilla
- 4 eggs
- 1 can (15 ounces) pumpkin (not pumpkin pie mix)
- 3 cups Gold Medal® all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 3/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground cloves
- 1 cup chopped dates
Mac and Cheese

Cook pasta according to directions and put in 9x13 pan
- 1 package cork screws or elbows
- 1 1/2 pounds of yellow Land O Lake Cheese
- 1 12 oz. can of evaporated milk
- 1 can water
- 2 tablespoons butter
- salt and pepper to taste
- Breadcrumbs OR corn flakes (optional)
Fruit Dip

Mix all ingredients. Serve with various fruit
- 2 cups Vanilla Nonfat Yogurt
- 2/3 cup Pineapple Juice (drained from a can of pineapple chunks)
- 1 pkg. of fat free vanilla instant pudding
Lemon Pie

In a mixing bowl, beat cream cheese and next two ingredients until smooth and creamy
- 1 8 oz. package reduced-fat cream cheese
- 1 14 oz. can fat-free sweetened condensed milk
- 1/2 cup lemon juice
- 1 tablespoon lemon zest
- 1 9-inch graham cracker pie crust
- Fresh berries, for serving
- Fresh lemons, for garnish
Sweet Potatoes with Apples and Cranberries

Combine all ingredients in Medium or Large Ziploc Zip'n Steam Bag
- 2 medium to large sweet potatoes (about 1 - 1 1/4 lbs total) peeled and cut into bite-size pieces
- 1 medium Granny Smith Apple, cored and diced into small (3/4 to 1") pieces
- 2 tablespoons dried cranberries
- 1 1/2 tablespoon butter
- 1 tablespoon brown sugar
- 3/4 teaspoon salt
- 1/2 teaspoon cinnamon

In a large bowl, combine the first four ingredients; set aside
- 4 cups Cheerios
- 2 cups crisp rice cereal
- 2 cups dry roasted peanuts
- 2 cups M & M's
- 1 cup light corn syrup
- 1 cup sugar
- 1 1/2 cups creamy peanut butter
- 1 teaspoon vanilla extract
Chicken-Broccoli Divan

Preheat oven to 450 degrees
- 1 pound fresh broccoli, cut into spears or 1 package (10 oz.) frozen broccoli spears, cooked and drained
- 1 1/2 cups cubed cooked chicken or turkey
- 1 can (10 3/4 oz.) Campbell's condensed cream of broccoli or cream of chicken soup
- 1/3 cup milk
- 1/2 cup shredded Cheddar cheese (2 oz.)
- 2 tbl. fine dry bread crumbs
- 1 tbl. margarine or butter, melted
Pasta & Fresh Tomato Sauce with Tuna & Feta

Prepare tomatoes and transfer to a medium bowl; sprinkle lightly with salt
- 1 pound vine-ripe tomatoes, cut into a small dice
- Salt
- 12 oz. penne pasta
- 2 cans (5 oz. EACH) tuna packed in oil, not drained
- 3 garlic cloves, minced
- 1 teaspoon dried oregano
- 1/2 cup capers, drained
- 4 oz. (about 1 cup) crumbled feta, plus extra for passing
- 1/4 cup chopped fresh parsley
