Old Fashioned Rice Pudding

In a saucepan, combine milk, rice, sugar and salt if desired; bring to a boil over medium heat, stirring constantly
- 4 1/2 cups milk
- 1/2 cup uncooked long grain rice
- 1/3 cup sugar
- 1/2 teaspoon salt (optional)
- 1/2 cup raisins
- 1 teaspoon vanilla extract
- Ground cinnamon (optional)
Avocado-Orange Spinach Toss

Dressing - In a small bowl, combine the first seven ingredients
- 1/4 cup orange juice
- 4 1/2 teaspoons lemon juice
- 1 tablespoon sugar
- 1 tablespoon vinegar
- 1 tablespoon canola oil
- 1/4 teaspoon grated orange peel
- Dash salt
- 6 cups fresh baby spinach
- 11 oz. mandarin oranges, drained
- 1 small cucumber, thinly sliced
- 1/2 medium rip avocado, peeled and sliced
Hydrating Salad

Place the cucumber, black beans, corn, red pepper, cherry tomatoes, and chopped cilantro in a bowl

- 1 can black beans, rinsed
- 1 1/4 cups corn
- 1 red pepper, diced
- 1 cup cherry tomatoes
- 1/2 cup fresh cilantro, chopped
- 1 lime
- 1 avocado, diced
- Salt and pepper to taste
- Lime Vinaigrette Dressing
- 2 tbl. freshly squeezed lime juice
- 1 tbl. finely chopped cilantro
- Dash of hot sauce
- Salt and pepper
- 3 tbl. extra Virgil olive oil

- 2 eggs
- 1 1/2 cups mashed ripe bananas (3 to 4 medium)
- 1/2 cup buttermilk
- 1 teaspoon vanilla
- 2 1/2 cups Gold Medal® all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup chopped nuts, if desired
Spinach Dip

Combine all ingredients in medium bowl; chill 2 hours
- 1 envelope of Lipton Recipe Secrets Vegetable Soup Mix
- 1 container (8 oz.) sour cream
- 1 cup Hellman's Mayonnaise
- 1 package (10 oz.) frozen chopped spinach, thawed and squeezed dry
- 1 can (8 oz.)water chestnuts, drained and chopped (optional)
Chocolate Crinkles

Mix granulated sugar, oil, chocolate and vanilla
- 2 cups granulated sugar
- 1/2 cup vegetable oil
- 4 oz. melted unsweetened chocolate (cool)
- 2 teaspoons vanilla
- 4 eggs
- 2 cups all-purpose flour*
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup powdered sugar
- *if using self-rising flour, omit baking powder and salt

- 1 cup sugar
- 1 cup dates, cut-up
- 1/2 cup butter
- 1 egg, beaten
- 2 cups Rice Krispies
- 1/2 cup chopped nuts

Heat oven to 400 degrees. Mix 1 1/2 cups sugar, margarine, shortening and eggs
- 1 1/2 cups sugar
- 1/2 cup margarine or butter, softened
- 1/2 cup shortening
- 2 eggs
- 2 3/4 cups all-purpose flour*
- 2 teaspoons cream of tartar
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 2 tablespoons sugar
- 2 teaspoons ground cinnamon
- *if using self-rising flour, omit cream of tartar, baking soda and salt

- 3 lb. package peeled baby carrots
- 2 tablespoons butter
- 3 to 4 tablespoons honey
- 1 teaspoon finely shredded lemon peel
- 1/2 teaspoon crushed red pepper
- 1/2 teaspoon salt
