Fresh Blueberry Pie

Line baked pie shell with softened cream cheese
- Glaze:
- One 9" baked pie shell
- Cream cheese, softened
- 4 cups fresh blueberries, (uncooked) cleaned and dry
- 1 cup sugar
- 1 cup water
- 3 tablespoons cornstarch
- 3 tablespoons lemon juice
- 1 cup blueberries (level measures, not heaping)
Spaghetti alla Puttanesca

Warm the oil in a frying pan
- 2 tbl. olive oil
- 6 anchovy fillets, chopped
- 2 cloves garlic, peeled and chopped
- 1 can (14-16 oz.) crushed plum tomatoes
- 12 roughly chopped black olives (pitted)
- A few shakes to taste of dried red pepper flakes
- Enough spaghetti for two
- 1 tbl. capers, rinsed well in water
- Large handful parsley, chopped
- Parmesan to serve (optional)
Slow Cooker Split Pea Soup

Prepare ingredients by slicing carrots and celery; chop parsley (about 1/4 cup
- 1 16 oz. package Green Split Peas, sorted and rinsed
- 2 cups diced, cooked ham
- 3 carrots
- 1/2 cup diced onions
- 2 ribs celery (including leaves)
- 2 cloves fresh garlic, minced
- 1 bay leaf
- 12- 15 sprigs fresh parsley
- 1 tablespoon seasoned salt
- 1/2 teaspoon fresh ground pepper
- 1 1/2 quarts water
- Fresh or seasoned croutons (optional)
Fire Grilled Garlic Bread

Working at a steep angle, slice the french bread 3/4 inch to 1 inch thick
- 1 loaf french bread
- 8 tablespoons butter, softened
- 4 cloves garlic, minced
- 1/4 cup parsley, finely chopped
- 1/4 cup grated parmesan
- 1/2 teaspoon Kosher salt
- 1/2 teaspoon black pepper
Russian Tea Cakes

Mix butter, confectioners sugar and vanilla thoroughly
- Sift:
- 1 cup butter, softened
- 1/2 cup sifted confectioners sugar
- 1 teaspoon vanilla
- 2 1/4 cups flour
- 1/4 teaspoon salt
- 3/4 cup chopped nuts
Stuffed Mushrooms with Escargot

Cream 6 tablespoons of the butter with the shallots, garlic, parsley, celery, salt and pepper
- 1/2 c Soft butter
- 1 t Minced shallots
- 1 Clove garlic (large), crushed
- 1 tb Minced parsley
- 1 tb Finely minced celery
- 1/4 ts Salt
- Freshly ground black pepper to taste
- 12 lg Mushrooms
- 12 lg Canned snails, drained
Veggie Chili

Cook carrots and onion 7 minutes in hot oil in pot on medium
- 1 large chopped carrot
- 1 medium chopped onion
- 2 teaspoons canola oil
- 1.25 oz. packet low-sodium chili seasoning
- 1/2 cup no salt added tomato sauce
- 1 1/2 cups no salt added V-8 juice
- 14.5 oz. undrained fire-roasted diced tomatoes
- 15 oz. can EACH rinsed - low-sodium black beans and great northern beans
- 1 medium EACH diced - zucchini and yellow squash
- 1/2 cup frozen whole kernel corn, thawed
- Water as needed
- Toppings: cilantro, low-fat sour cream, green onions, low-fat cheddar cheese
Berry Poke Cake

Heat oven to 350 degrees. Make cake as directed on box for 13x9 inch pan
- 1 package Betty Crocker SuperMoist white cake mix
- Water, vegetable oil and egg whites as called for in cake mix directions
- 1 package (4 serving size) strawberry or raspberry flavored gelatin
- 1 cup boiling water
- 1/2 cup cold water
- 1 container of 8 oz. Cool Whip
- Fresh strawberries or raspberries, if desired
Bob's Basic Meatloaf

Mix ground beef, salt, pepper, eggs, bread crumbs, milk, Worcestershire sauce, onion, thyme and rosemary
- 2 pounds lean ground beef
- 2 teaspoons salt
- 1/4 teaspoon ground black pepper
- 2 eggs, lightly beaten
- 1/2 cup soft bread crumbs
- 1/2 cup milk
- 1 teaspoon Worcestershire sauce
- 1/4 cup finely chopped onion
- 1/4 teaspoon thyme
- 1/4 teaspoon rosemary
- 3 slices bacon, havled crosswise

- Topping:
- 2 sticks of margarine OR 1/2 pound butter
- 1 cup sugar
- Pinch of salt
- 2 cups pitted dates (cut up)
- 2 eggs (divided)
- 2 teaspoons vanilla
- 2 cups flour
- 2 packages of sliced almonds
- Brown sugar
