Vegetable Lasagna

In skillet over medium heat, cook onion and garlic in hot oil for 3 minutes, stirring
- 1 onion, chopped (about 1 cup)
- 1 1/2 tablespoons minced fresh garlic (about 5 cloves)
- 1/2 tablespoon extra virgin olive oil
- 1 lb. broccoli, coarsley chopped
- 1/2 lb. yellow squash, halved lengthwise and sliced
- 1 red pepper, chopped
- 1/2 lb. mushrooms, sliced
- 2 teaspoons minced fresh thyme
- 2 containers (15 oz. EACH) light ricotta cheese
- 1 1/2 cups shredded part-skim mozzarella cheese, divided
- 1/4 cup and 1 tablespoon grated parmesan cheese, divided
- 1 egg
- 2 tablespoons chopped parsley, divided
- 1 jar (28 oz.) tomato sauce
- 1 package (16 oz.) lasagna noodles, cooked as directed
Filet of Fish Stuffing

Mix all ingredients, EXCEPT paprika and margarine
- 6-8 Ritz or Townhouse Crackers, crushed
- 1/4 lb. crabmeat
- Pinch of Parsley
- Salt and Pepper
- 2 tablespoons mayonnaise
- Paprika
- Margarine
Apple Tart

Heat oven to 425 degrees. Prepare crust as directed on package
- 1 refrigerated pie crust
- 1 egg white, lightly beaten
- 3/4 cup sugar
- 2 tablespoons cornstarch
- 2 teaspoons cinnamon
- 4 cups apples, peeled and thinly sliced (4 medium)
- 1 teaspoon sugar
Fruity Rum Punch

Pour the white rum, coconut rum, pineapple juice and orange juice into a tall glass filled with ice
- 1 oz. white rum
- 1 oz. coconut rum
- 2 oz. pineapple juice
- 2 oz. orange juice
- 1 tbl. grenadine
- 1 tbl. dark rum
Ham, Asparagus & Swiss Quiche

Prepare crust in 10" quiche pan and refrigerate
- 1 refrigerated pie crust (from 15 oz. package)
- 1 tablespoon butter
- 1 medium onion, sliced
- 8 ounces EACH, cut in pieces: fresh asparagus and ham
- 2 medium tomatoes, chopped
- 3 whole eggs
- 1/2 cup 1% milk
- 1/4 teaspoon nutmeg
- Dash of hot sauce
- 8 ounces shredded low-fat Swiss cheese
Oatmeal Scotchies

Combine flour, baking soda, salt and cinammon in small bowl
- 1 1/4 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinammon
- 2 sticks margarine
- 3/4 cup sugar
- 3/4 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 3 cups oatmeal
- 2 cups (12 oz) butterscoth morsels
Bean and Pasta Soup

In a large pot, heat oil and brown meat
- 1 tablespoon olive oil
- 1/2 lb. ground beef
- 1 medium onion, chopped
- 1 carrot, shredded
- 1 stalk celery, diced
- 2 cloves garlic, minced
- 1/2 teaspoon dried oregano
- 1 teaspoon dried basil
- 4 cups beef or vegetable stock
- 28 oz. can crushed tomatoes
- 15.5 oz can cannellini beans, drained and rinsed
- 1 small zucchini, diced
- 2 tablespoons fresh parsley, chopped
- 1 cup uncooked small pasta, such as shells or tubes
- salt and pepper to taste
- 1/4 cup Parmesan cheese (optional)
Philly Marble Brownies

Prepare brownie mix as directed on package
- 1 package (21 1/2 oz.) brownie mix
- 1 package (8 oz.) Philadelphia Brand Neufchatel Cheese, 1/3 less fat than Cream Cheese, softened
- 1/3 cup sugar
- 1/2 teaspoon vanilla
- 1 egg
- 1 cup Bakers semi-sweet real chocolate chips
Grilled Salsa

Stem the tomatoes, clean the peppers but leave whole for roasting
- 6 large ripe tomatoes, about 3 pounds
- 1 yellow pepper
- 1 red bell pepper
- 2 cucumbers, seeded
- 1 large sweet onion, cut in half
- 1 head garlic, roasted
- 2 bunches scallions
- 1/2 - to 3/4 cup olive oil
- Kosher salt
- freshly ground black pepper
- Tabasco
- tortilla chips for serving

- 16 oz. container of Daisy Brand Sour Cream
- 3 oz. jar Bacon Bits
- 2 cups shredded cheddar cheese
- 8 oz. package cream cheese, softened
- 1 cup chopped green onions
