Leg of Lamb

- 1 pound dried split green peas, rinsed and drained
- 8 cups water
- 2 carrots, scrubbed but not peeled, cut into eighths
- 3 cloves garlic, quartered
- 2 stalks celery with leaves, cut in eighths
- 4 ounces lean ham, visible fat removed, cut into bite-size pieces
- 3 tablespoons low-sodium soy sauce
- 1 teaspoon chopped fresh oregano OR 1/2 teaspoon dried oregano
- 1/2 teaspoon grated fresh ginger OR 1/8 teaspoon dried ginger
- 3 dashes hot pepper sauce, or to taste
- Freshly ground black pepper to taste

Whole turkey is safe when cooked to a minimum of 165 degrees when measured with a food thermometer

- 8-12 LBS (2 3/4 - 3 hrs)
- 12-14 LBS (3 - 3.75 hrs)
- 14-18 LBS (3.75 - 4.25 hrs)
- 18-20 LBS (4.25 - 4.5 hrs)
- 20-24 LBS (4.5 - 5 hrs)
- WEIGHT STUFFED
- 8-12 LBS (3 - 3.5 hrs)
- 12-14 LBS (3.5 - 4 hrs)
- 14-18 LBS (4 - 4.25 hrs)
- 18-20 LBS (4.25 - 4.75 hrs.)
- 20-24 LBS (4.75 - 5.25 hrs.)
- Cover bird with foil after 2/3 cooking time to prevent it from becoming dry.
- DO NOT add water or cover turkey.
- Let stand for at least 15 minutes before carving.

- 2 (8 oz. packages) cream cheese
- 2 eggs
- 2 teaspoons vanilla
- 1/2 cup sugar
Sausage Mushroom Alfredo Pasta

- 1 large leek, coarsely chopped
- 2 tablespoons fresh Italian parsley, chopped
- 2 links mild Italian sausage (8 oz.)
- 2 tablespoons olive oil, divided
- 8 oz. rigatoni pasta
- 8 oz. fresh pre-sliced baby portabellas
- 1/2 cup white wine OR chicken broth
- 1 (15 oz.) jar Classico Roasted Garlic Alfredo Sauce
- 2 oz shredded Monterey Jack cheese

- 1/2 cup sugar

- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder

Magic Cookie Bars

Melt butter in a 13x9 baking pan
- 1/2 cup butter or margarine
- 1 1/2 cups graham cracker crumbs
- 1 can Eagle Brand Sweetened Condensed Milk (not evaporated milk)
- 1 pkg. (6 oz.) semi-sweet chocolate chips
- 1 can (3 1/2 oz.) flaked coconut
- 1 cup chopped nuts
Potatoes Made Easy

Combine vegetables and seasonings; divide among four pieces of heavy duty foil (about 12"square)
- 4 medium red potatoes, cubed
- 1 medium onion, cubed
- 1 medium sweet red pepper, cubed
- 1/2 teaspoon seasoned salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon each dried basil, dill weed and parsley flakes
- 1/4 cup butter, cubed
