Tuscan Vegetable Soup

In a small bowl, mash half of the beans with a masher or the back of a spoon; set aside
- One 15.5 oz. can cannellini or other small white beans, preferably low-sodium, drained and rinsed
- 1 tablespoon olive oil
- 1/2 large onion, diced (about 1 cup)
- 1 medium carrot, diced (about 1/2 cup)
- 2 stalks celery, diced (about 1/2 cup)
- 1 small zucchini (about 1/2 pound), diced (about 1 1/2 cups)
- 1 clove garlic, minced (about 1 teaspoon)
- 1 tablespoon chopped fresh thyme OR 1 teaspoon dried
- 2 tablespoons chopped fresh sage OR 1/2 teaspoon dried
- 1/2 teaspoon salt, plus more to taste
- 1/4 teaspoon freshly ground black pepper, plus more to taste
- 4 cups low-sodium chicken or vegetable broth
- One 14.5 oz.can no-salt added diced tomatoes, with their juices
- 2 oz. baby spinach leaves (2 cups lightly packed), chopped
- 1/3 cup freshly grated Parmesan Cheese
Cranberry Nut Bread

Preheat oven to 350 degrees
- 2 cups flour
- 1 cup sugar
- 1 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 3/4 cup orange juice
- 1 tablespoon grated orange peel
- 2 tablespoons shortening
- 1 egg, well beaten
- 1 1/2 cups fresh or frozen cranberries, coarsley chopped
- 1/2 cup chopped nuts
Pasta w/Chicken & Brussels Sprouts

Heat large covered saucepot of salted water to boiling on high
- 12 oz. cavatappi pasta
- 1 lb. boneless, skinless chicken thighs, cut into 1/2" chunks
- Salt and Pepper
- 2 teaspoons olive oil
- 10 oz. Brussels sprouts, sliced
- 1/4 cup water
- 1 tablespoon margarine OR butter
- 1/4 teaspoon crushed red pepper
- 1/4 cup plain dried bread crumbs
- 3 cloves garlic, crushed with press
- 1/4 cup grated Parmesan cheese
- 2 tablespoons finely chopped parsley
Breakfast Bread Boat

In a medium bowl, mix eggs, cream, bacon, cheese, and onions
- 1 Baguette
- 5 large eggs
- 1/3 cup heavy cream or whole milk
- 4 oz cooked bacon bits
- 4 oz cheese
- 2 green onions thinly sliced
- In a medium bowl, mix eggs, cream, bacon, cheese, and onions.
- Cut a long rectangle through the top of the baguette and partially unstuff the baguette. Spoon the mixture into the baguette.
- Bake for 25 minutes at 350 F (175 C)
- Cut and serve while still warm.
Waffled French Toast

Preheat waffle maker according to manufacturer's instructions
- Melted butter or nonstick cooking spray for cooking
- 6 eggs
- 2 cups half-and-half
- 1 tablespoon vanilla extract
- 1/2 teaspoon ground cinammon
- 1/4 teaspoon grated nutmeg
- 2 tablespoons firmly packed light brown sugar
- 8 slices brioche, each 1 1/4" thick
Slow Cooker Veggie Baked Beans

Mix all ingredients in a medium-sized slow cooker
- 1 can (15 oz.) chili beans in mild chili sauce
- 1 can (15 1/2 oz.) EACH, DRAINED, light kidney beans, butter beans
- 2 cups (half of 16 oz. bag) frozen corn kernels
- 1 small onion, chopped
- 2 celery ribs, chopped
- 3/4 cup packed light brown sugar
- 1/3 cup barbecue sauce
- 1 teaspoon yellow mustard
Grilled Eggplant Slices

Prepare a charcoal grill; let burn until coals are covered in gray ash OR heat a gas grill to medium
- 1 to 1 1/2 lbs. eggplant
- Olive Oil
- Seasoning Rub
- Salt
Golden Rum Cake

1. Preheat oven to 325 degrees F (165 degrees C)
- 1 cup chopped walnuts
- 1 (18.25 ounce) package yellow cake mix
- 1 (3.4 ounce) package instant vanilla pudding mix
- 4 eggs
- 1/2 cup water
- 1/2 cup vegetable oil
- 1/2 cup dark rum
- 1/2 cup butter
- 1/4 cup water
- 1 cup white sugar
- 1/2 cup dark rum
Slow-Cooked Pulled Pork

Mix all ingredients EXCEPT pork, in a 6 qt
- 2/3 cup Worcestershire Sauce
- 1/2 cup Heinz Tomato Ketchup
- 1/4 cup firmly packed brown sugar
- 1/4 cup tomato paste
- 1 medium white onion, chopped
- 2 tablespoons yellow mustard
- 2 tablespoons white vinegar
- 3 1/2 lb. boneless pork shoulder, trimmed and cut into 4 pieces
Steamed Clams

Saute garlic and shallots in olive oil until tender
- 2 cloves garlic, minced
- 1 large shallot, minced
- 2 tablespoons olive oil
- 1 bottle of beer
- 4 tablespoons chopped fresh parsley
- 1 pound Maine (mahogany) clams (may substitute mussels)
