Cheesy Chicken and Rice

Heat oil in medium skillet over medium-high heat
- 1 Tablespoon vegetable oil
- 1 1/2 lb. skinless, boneless chicken breaasts (4 to 6)
- 1 can (10 3/4 ounces) Campbell's condensed cream of chicken soup
- 1 1/2 cups water
- 1/4 teaspoon paprika
- 1/4 teaspoon ground black pepper
- 1 1/2 cups uncooked instant white rice
- 2 cups fresh or frozen broccoli flowerets
- 1/2 cup shredded cheddar cheese
Cranberry Salsa w/Chips

Combine water and sugar in medium saucepan
- 1 cup water
- 1 cup sugar
- 12 ounces fresh cranberries
- 2 Tablespoons chopped canned jalapeno peppers
- 1 teaspoon dried cilantro
- 1/4 teaspoon ground cumin
- 1 green onion sliced
- 1 teaspoon lime juice
Tomato Bacon Rotini

Cook the Rotini according to package directions
- 16 ounces Mueller's Rotini
- 1/4 cup margarine or butter
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 2 3/4 cups milk
- 1 1/2 cups grated Parmesan cheese
- 8 slicese bacon, cooked and crumbled
- 2 medium tomatoes, chopped
Cinnamon French Toast

In a shallow bowl, using a wire whisk or a fork, beat the egg and egg whites until foamy
- 1 large egg
- 2 egg whites
- 1/4 cup skim milk
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 8 1-inch-thick diagonally cut slices French or Italian bread
- Cinnamon sugar and reduced-calorie maple syrup (optional)
Olive Frittata

Preheat oven to 400 degrees
- 3 Tablespoons extra-virgin olive oil, 3 turns of the pan
- 1 onion, thinly sliced
- 1 roasted red pepper, drained, pat dry and diced
- 1/2 to 2/3 cup drained chopped Spanish green olives with pimiento
- 6 eggs
- Generous splash of half-and-half or milk
- Salt and pepper
