Crab Cake Sliders

Prepare the crab cakes: Tear 3 buns into small pieces to make about 3/4 cup; put in a medium bowl
- 18 mini potato buns
- 1/2 cup plus 2 Tablespoons mayonnaise
- 2 Tablespoons unsalted butter, plus more for brushing
- 1 large egg
- 1 teaspoon Old Bay seasoning
- 1 teaspoon Worcestershire sauce
- 1 teaspoon yellow mustard
- Kosher salt
- 1 pound lump crabmeat, picked through
- 10 strips bacon
- Finely grated zest of 1 lemon
- Freshly ground pepper
- Diced red onion, sliced tomatoes and lettuce leaves, for topping
- Pickles, for serving (optional)
Tomato, Onion and Cucumber Salad

Dress the tomatoes, onions and cucumber with oilve oil, red wine vinegar, salt and pepper
- 5 medium plum tomatoes, halved lengthwise, seeded and thinly sliced
- 1/4 red onion, peeled, halved lengthwise and thinly sliced
- 1 Kirby cucumber, halved lengthwise and thinly sliced
- A generous drizzle of extra-virgin olive oil, about 2 Tablespoons
- 2 splashes red wine vinegar
- Coarse salt and black pepper
Crab Pasta Salad

Cook the pasta until tender
- 12 ounces tri-color rotini
- 3 green onions finely chopped
- 1/4 cup finely chopped green pepper
- 1/8 cup chopped black olives
- 4 ounces shredded cheddar cheese
- 12 ounces imitation crab meat, chopped
- 1/4 cup parmesan
- 1/2 cup mayonnaise
- 1/2 cup creamy Italian or ranch dressing (both are great)
Zucchini Bread

Mix and stir all ingredients
- 4 cups shredded zucchini
- 4 cups flour
- 2 1/2 cups sugar
- 1 1/2 cup oil
- 4 eggs, beaten
- 1 Tablespoon and 1 teaspoon vanilla
- 1 Tablespoon cinnamon
- 1 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- NOTE: One cup nuts and raisins can be added.
Microwave Fudge

Mix powdered sugar, cocoa, milk and salt together in a microwave safe bowl
- 1 box powdered surgar
- 1/2 cup cocoa
- 1/4 cup milk
- 1/2 teaspoon salt
- 1 stick butter or margarine
- 1 teaspoon vanilla
- 1/2 cup chopped pecans
Shrimp Dip

Mix all ingredients together
- 1 (3 ounce) cream cheese
- 1/2 stick butter
- 1 big spoonful of mayonnaise
- 1-2 cans shrimp
- couple dashes of Worcestershire sauce
- couple dashes of Tabasco sauce
- couple shakes of garlic
- little grated onioin
Shrimp Caesar Salad

To prepare dressing: Combine mayonnaise and next 7 ingredients (through garlic), stirring with a whisk
- DRESSING:
- 2 Tablespoons light mayonnaise
- 2 Tablespoons water
- 2 Tablespoons fresh lemon juice
- 1 teaspoon grated Parmesan cheese
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon Sriracha (hot chile sauce, such as Huy Fong)
- 1/8 teaspoon Worcestershire sauce
- 2 garlic cloves, minced
- SALAD:
- 3/4 cup fat-free seasoned croutons
- 2 Tablespoons grated Parmesan cheese
- 1 1/2 pounds medium shrimp, cooked and peeled
- 1 (10 ounce) package chopped romaine lettuce
- 3 Tablespoons pine nuts, toasted
- Chopped fresh chives (optional)
Cornbread Dressing

Mix cornbread with crumbs and add stock
- 4 cups crumbled cornbread
- 2 cups dry bread crumbs
- 3 1/2 cups chicken stock
- 3 eggs
- 1 cup milk
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 1 cup chopped celery
- 1 teaspoon poultry seasoning or sage
- 1/4 to 1/2 cup chopped onion
Banana Bread

No need for a mixer for this recipe
- 3 or 4 ripe bananas, smashed
- 1/3 cup melted butter
- 1 cup sugar (can easily reduce to 3/4 cup)
- 1 egg, beaten
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- Pinch of salt
- 1 1/2 cups all-purpose flour
Buffalo Chicken Dip

- 1 package (8 ounces) cream cheese, softened
- 1 can (10 ounces) chunk white chicken, drained
- 1/2 cup buffalo sauce
- 1/2 cup ranch salad dressing
- 2 cups (8 ounces) shredded Colby-Monterey Jack cheese
