Hush Puppies w/Cheese Sauce

Combine with dry ingredients and form into finger shaped patties
- Cheese Sauce
- Hush Puppies
- 1cup1 cup water ground cornmeal
- 1/2teaspoon1/2 teaspoon double acting baking powder
- 1/2teaspoon1/2 teaspoon salt
- 2Tablespoons2 Tablespoons minced onion
- beat together 1 egg and 1/4 cup milk
- Combine with dry ingredients and form into finger shaped patties. Deep fry at 375 degrees until golden brown; drain on absorbent paper and serve at once.
Cheese Nibblers

Cut a good cheese, such as aged Cheddar, smoked Gouda, or fontina, into small cubes
- Cheddar, smoked Gouda, or fontina cheese
- honey, marmalade or jam
- chopped nuts, poppy, sesame seeds, fresh herbs or smoked paprika
Potato, Leek, Bacon and Cheddar Cheese Soup

Cook bacon in a large skillet over moderate heat, turning, until crisp
- 8 slices bacon
- 8 medium leeks (white and plate-green parts only) chopped
- 3 1/2 pounds medium Yukon gold potatoes, peeled and cut
- 3 thyme sprigs
- 8 ounces part-skim cheddar cheese, coarsely grated
- 1 3/4 cups chicken broth
- 3/4 cup half-and-half
- 1 10 ounce box frozen corn kernels, thawed
- 3 scallions (green part only), chopped, plus additional for garnish
Zucchini Fritters with Roasted Red Pepper Dip

Preheat the oven to 300 degrees
- 4 zucchini (about 1 1/2 pounds total)
- Salt
- 2 large eggs
- Pepper
- 1/2 cup flour
- 3 Tablespoons extra-virgin olive oil; plus more as needed
- One (12 ounce) jar roasted red peppers, drained
- 1 clove garlic, smashed and peeled
- Hot pepper sauce

- 1 lb lean ground beef
- 1 can pork and beans
- 1 can tomato soup
- 1 can vegetarian vegetable soup
- salt and pepper to taste
- Shredded Cheese and Saltine crackers for serving

- 16 ounces tri-color pasta
- small can black olives
- small can drained corn
- FOR SEASONING:
- 1 teaspoon sugar
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- salt to taste
- 1/2 cup mayonnaise
- 1/2 cup ranch dressing
Louisiana Red Beans and Rice

Smooth, flavorful, hearty and wonderful!!! I always make this for my annual Mardi Gras party!
- 1 pound red beans, washed, drained, and soaked in water overnight, drained 3 cups water
- 2 cloves garlic, chopped
- 1/2 cup chopped celery
- 1 large bay leaf, crushed
- 1 medium onion, chopped
- 1/2 cup cooking oil
- salt and pepper
- 1 pound smoked sausage, sliced
- 2 Tablespoons parsley, chopped
- steaming rice
Shrimp Pasta

- one stalk celery, chopped
- 1 small to medium onion
- 2 teaspoons lemon juice
- 1 cup mayonnaise

- 1/3 cup apricot jam
- 1/4 cup freshly squeezed lime juice
- 2 teaspoons curry powder
- 1 pound boneless, skinless chicken breast halves (3-4)
- Salt and pepper to taste
- 3 to 4 cups cut up fruit (grapes, peaches, pineapple, and/or papaya)
- 1/3 cup slivered almonds, toasted
