Candied Yams

Boil sweet potoates about 10 minutes
- 4 medium sweet potatoes
- 1/2 cup butter or margarine
- 1 cup white sugar
- 1 cup brown sugar
- 1 Tablespoon vanilla extract
- 1 teaspoon nutmeg
- 2 Tablespoons flour
Emeril's Andouille Pudding

Heat the oil in a skillet over medium-high heat and saute the andouille for 3 to 4 minutes
- 1 Tablespoon vegetable oil
- 1 pound andouille sausage, coarsely chopped
- 1 cup chopped onions
- 1/2 cup chopped celery
- 2 Tablespoons chopped garlic
- 5 eggs
- 1 cup heavy cream
- 3 cups milk
- 1 Tablespoon salt
- 1/2 teaspoon cayenne
- 1/4 teaspoon freshly ground black pepper
- 8 cups 1-inch-cubed white bread
- 8 ounces white cheddar, grated (2 cups)
Cornbread Dressing with Pecans and Bacon

Preheat the oven to 350 degrees Fahrenheit
- 12 cups (3 quarts) stale cornbread, crumbled
- 6 slices stale, dry firm-textured white bread, torn
- 2 cups coarsely chopped toasted pecans
- 1/2 cup coarsely chopped parsley (or a scant 1/4 cup of dried)
- 1 pound hickory-smoked bacon, each slice cut crosswise into strips 1/2 inch wide
- 1 cup (2 sticks) butter, melted, or 1 cup bacon drippings or vegetable oil
- 2 large yellow onions, coarsely chopped
- 4 large celery ribs, trimmed and coarsley chopped (include a few leaves)
- 1 Tablespoon rubbed sage
- 1 1/2 teaspoons dried leaf thyme, crumbled
- 6 cups chicken broth or stock
- 3 extra-large eggs, well beaten
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Stir Fry with Ramen

Cook Ramen 1 minute. Heat two tablespoons oil then cook Ramen in oil for one minute
- 2 packages Ramen (any flavor)
- 1 package cole slaw mix
- 12 ounces frozen broccoli
- 2 Tablespoons brown sugar
- soy sauce (as little or as much as wanted)
Spinach and Sun-Dried Tomato Pasta

In a small saucepan, bring the broth to a boil
- 1 cup vegetable broth
- 12 dehydrated sun-dried tomatoes
- 1 (8 ounce) package uncooked penne pasta
- 2 Tablespoons pine nuts
- 1 Tablespoon olive oil
- 1/4 teaspoon crushed red pepper flakes
- 1 clove garlic, minced
- 1 bunch fresh spinach, rinsed and torn into bite-size pieces
- 1/4 cup grated Parmesan cheese
- Above are the original ingredients to this recipe. I also add black olives and shrimp to mine.
Guacamole

Add together all ingredients with the exception of avacado
- 3 ripe avacados
- 1 diced tomato
- juice of one lime
- 2 Tablespoons orange juice
- 2 Tablespoons grated onion
- 2 Tablespoons fresh cilantro or one bunch chopped
- 1 jalapeno diced
- 1 teaspoon jalapeno juice
- 1 teaspoon garlic
- 1 teaspoon cayene pepper
- salt and pepper
Smashed Potatoes and Cream Cheese

Boil potatoes until tender, 15 minutes
- 2 1/2 pounds small red potatoes or baby Yukon gold potatoes
- 1/2 cup half-and-half or whole milk
- 8 ounces plain cream cheese or veggie cream cheese, cut into pieces
- 10 chives or 2 scallions, chopped or snipped with kitchen scissors
- Salt and pepper
Mac and Cheese (2)

Cook macaroni in boiling salted water until tender, drain and keep hot
- 1 lb. elbow macaroni
- 1 lb. (4 cups) shredded extra-sharp cheddar cheese
- 2 Tablespoons flour
- 3 Tablespoons minced onion
- 1/4 teaspoon ground mustard
- Salt and pepper to taste
- 2 cups low-fat milk
- 1 1/2 Tablespoons butter
Spring Shells and Cheese

Grate the zucchini into a colander using the large holes of a box grater
- 2 pounds medium zucchini
- Kosher salt
- 1 stick unsalted butter
- 1/4 cup all-purpose flour
- 1/2 teaspoon freshly grated nutmeg
- Pinch of cayenne pepper
- Freshly ground black pepper
- 6 cups whole milk
- 4 sprigs fresh thyme
- 3 bay leaves
- Grated zest of 1/2 lemon
- 1 pound medium pasta shells
- 4 shallots, minced
- 2 large egg yolks, lightly beaten
- 4 ounces parmesan cheese, grated (about 1 cup)
- 4 ounces gruyere cheese, grated (about 1 1/4 cups)
- 4 ounces baby spinach
Hot Spinach Spread with Pita Chips

In a large bowl, combine the firest seven ingredients
- 2 cups (8 ounces) shredded Monterey Jack cheese
- 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
- 1 package (8 ounces) cream cheese, cubed
- 2 plum tomatoes, seeded and chopped
- 3/4 cup chopped onion
- 1/3 cup half-and-half cream
- 1 Tablespoon finely chopped seeded jalapeno pepper
- 6 pita breads (6 inches)
- 1/2 cup butter, melted
- 2 teaspoons lemon-pepper seasoning
- 2 teaspoons ground cumin
- 1/4 teaspoon garlic salt
