Oven Barbecued Ribs

Place ribs in a greased roasting pan
- 4 pounds country-style pork ribs
- 1 1/2 cups water
- 1 cup ketchup
- 1/3 cup Worcestershire sauce
- 1 teaspoon salt
- 1 teaspoon chili powder
- 1/2 teaspoon onion powder
- 1/8 teaspoon hot pepper sauce
Vanilla Nut Roll

Mix together well. Divide into sections and roll out logs or press into a square pan
- 1 can Eagle brand milk (sweetened condensed milk)
- 1 cup coconut
- 2 cups pecans, chopped
- 1/2 package Nilla wafers, crushed

Fruit Salad

Combine apples, orange, pineapple, coconut, grapes and pecans in a bowl
- 1 red delicious apple, unpeeled and diced
- 1 golden delicious apple, unpeeled and diced
- 1 orange, peeled, sectioned and diced
- 1 cup crushed pineapple
- 1 cup cocnut
- 1 cup white grapes, halved
- 1 cup chopped pecans
- 1/2 cup non-dairy whipped topping
- 1/2 cup mayonnaise
Cheese Dip

Easy Peach Cobbler

Melt butter in a 13x9 baking dish
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 2 cups sugar, divided
- 1 Tablespoon baking powder
- Pinch of salt
- 1 cup milk
- 4 cups fresh peach slices (or canned peaches, drained)
- 1 Tablespoon lemon juice
- Ground cinnamon or nutmeg (optional)

- 3/4 cup granulated sugar
- 1 cup dark corn syrup
- 1 tsp. vanilla
- 1/4 cup melted butter
- 1 cup pecans

- for the soup:
- 2 teaspoons olive oil
- 1 1/2 lbs. Italian sausage
- 3 cups chopped onions (recipe calls for this amount; I think that's way to much so I only put 1 cup)
- 4 garlic cloves, minced
- 2 teaspoons dried oregano
- 1/2 tsp. crushed red pepper flakes
- 2 Tablespoons tomato paste
- 1 28 oz. can fire roasted diced tomatoes
- 2 bay leaves
- 6 cups chicken stock
- 8 oz. mafalda or fusilli pasta
- 1/2 cup finely chopped fresh basil leaves
- salt and freshly ground black pepper; to taste
- for the cheesy yum:
- 8 oz. ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon salt
- pinch of fresh ground pepper
- 2 cups shredded mozzarella cheese
