Small-dice the first four ingredients and combine in a large bowl
- 2 mangos
- 1/2 red bell pepper
- 1/2 yellow bell pepper
- 2 jalapeno peppers
- 1/2 cup shredded coconut
- 1 bunch cilantro, minced
- 3 limes, juiced
- 1 pinch salt
Avocado Basil Pasta

Cook pasta according to package directions
- 8 ounces dried bowtie and/or wagon wheel pasta
- 2 medium avocados, halved, seeded, peeled and coarsely chopped
- 6 slices bacon, crisp cooked, drained and crumbled
- 2/3 cup chopped fresh basil
- 2 Tablespoons lemon juice
- 1 Tablespoon olive oil
- 3 cloves garlic, minced
- 1/4 teaspoon ground black pepper
- 1/8 teaspoon salt
- 1/2 cup finely shredded Pecorino Romano cheese
Perfect Apple Pie

- Dough:
- 2 1/3 cups all-purpose flour
- 1/4 cup plain yellow cornmeal
- 2 Tbsp. sugar
- 3/4 tsp. salt
- 3/4 cup cold butter, cut into 1/2-inch pieces
- 1/4 cup cold shortening, cut into 1/2-inch pieces
- 8 to 10 Tbsp. chilled apple cider
- Pie:
- 4 1/2 pounds Granny Smith apples; peeled and cut into 1/2-inch thick wedges
- 1 cup sugar
- 1/4 cup all-purpose flour
- 3/4 tsp. ground cinnamon
- 1/4 tsp. salt
Corn Dip

Blend Hidden Valley Ranch with mayonnaise and sour cream
- 1 15 ounce can whole kernel corn, drained
- 1 package Hidden Valley Ranch Dressing Mix
- 1 8 ounce package sour cream
- 1 cup mayonnaise
- 1 small onion (optional, better with)
- 2 cups fine shredded cheese
- 1 can Rotel tomatoes, drained (original blend)
- 2 heaping Tablespoons jalapeno peppers, finely chopped
Thai Noodle Salad

Whisk all ingredients for vinaigrette together
- VINAIGRETTE:
- 1/4 cup fresh lime juice
- 3 Tablespoons vegetable oil
- 3 Tablespoons soy sauce
- 2 Tablespoons brown sugar
- 1 Tablespoon sesame oil
- 1 Tablespoon minced garlic
- 1 Tablespoon grated orange or lime zest
- 1 Tablespoon minced jalapeno pepper
- salt and pepper to taste
- SALAD:
- 1/2 pound green beas or asparagus spears, trimmed
- 8 ounces Chinese egg noodles, fresh or dried
- 2 cups shredded carrots
- 1/2 cup slivered red pepper
- 1 cup thinly sliced green onions
Bloody Mary

Put the minced shallot in a small strainer and rinse under cold water
- 1 small shallot, finely minced
- 1 stalk celery, tough strings peeled
- 1 radish, thinly sliced
- Kosher salt and freshly creacked pepper
- 5 ounces cold vodka, plus more for topping
- 5 ounces cold tomato juice
- 1 lemon halved
- 1 teaspoon Angostura or Peychaud's bitters
- 2 teaspoons creamy horseradish (Inglehoffer)
- 3dashes Worcestershire sauce
- 3 drops hot sauce

- VEGGIE COMBO:
- 1 vegetable combination (I like zucchini, tomato and basil)
- 8 teaspoons reduced-sodium chicken broth or water
- 4 boneless, skinless salmon fillets (6 ounces each), 1-1 1/4 at thickest point
- 2 zucchini, thinly sliced
- 1 cup halved grape tomatoes
- 3 Tablespoons torn basil leaves
- 4 teaspoons olive oil
- 1 teaspoon drained capers (optional)
- 1/4 teaspoon salt
- ALTERNATE VEGGIE COMBO:
- Red pepper, onion and chickpeas
- 1 red pepper, thinly sliced
- 1 small red onion, thinly sliced
- 1/2 cup canned chickpeas
- 12 halved kalamata olives
- 4 teaspoons olive oil
- 1/4 teaspoon salt
- 1/8 teaspoon ground cinnamon
Baked Beans

- 1 large can baked beans
- 3 Tablespoons ketchup
- 1 Tablespoon mustard
- 2 Tablespoons Worcestershire sauce
- 1/4 cup brown sugar
- 1/2 lb. bacon
Spinach and Artichoke Heart Two Potato Casserole

Preheat oven to 425 degrees and coat a 9-inch square baking dish with nonstick cooking spray
- 1 pound red potatoes
- 1 pound Yukon Gold potatoes
- 1 1/4 cups vegetable broth or stock
- 1/2 cup shredded Parmesan cheese
- 1 teaspoon garlic salt
- 4 ounces Neufchatel (1/3 less fat) cream cheese
- 4 ounces fat-free cheddar cheese
- 1 jar (7.5 ounces) marinated artichoke hearts, drained and chopped
- 1 bag (6 ounces) baby spinach, coarsely chopped
- 1/2 cup sliced green onions
Daisy Brand Potato Skin Poppers
