Hummus

Place all ingredients into a food processor (except the salt) and process until the hummus is coarsely pureed
- 2 cups cooked chickpeas
- 1 tsp himalayan salt, or to taste
- 2 garlic cloves
- 1/3 Cup tahini (I prefer raw tahini)
- 7-8 tbsp freshly squeezed lemon juice
- 2 Tbsp water
- 4-8 drops of hot sauce (amazing), to taste
- Olive oil, for drizzling
- Paprika, for garnish
- Pomegranite arils (surprisingly delicious mixed in or scattered on top)
Chicken with Artichokes and Angel Hair

Set a large pot of salted water to boil
- * Coarse salt and ground pepper
- 1/4 * 1/4 cup all-purpose flour
- 8 * 8 thin chicken cutlets (about 1 1/2 pounds total)
- 2 * 2 tablespoons olive oil
- 1 * 1 cup reduced-sodium chicken broth
- 1 * 1 can (14 ounces) artichoke hearts packed in water, rinsed, drained, and quartered
- 2 * 2 tablespoons rinsed and drained capers
- 2 * 2 tablespoons butter
- 8 * 8 ounces angel-hair pasta
- 1/2 * 1/2 cup parsley leaves
Chocolate Dipped Chocolate Chip Cookie Dough Balls

Line a baking sheet with parchment paper or a non stick mat
- 2/3 cup cashews
- 1/2 cup + 1 tbsp regular oats
- 3/4 cup whole grain spelt flour (or other flour)
- 1 tsp sea salt
- 5 pitted medjool dates, chopped
- 1 tsp pure vanilla extract
- 3-5 tbsp pure maple syrup, to taste
- 1/3 cup dark chocolate, melted, for dipping
Chocolate Blueberry Energy Bars (Raw)

In a food processor, process all ingredients except frozen blueberries
- 1 cup fresh or soaked dried dates
- 1/4 cup almonds
- 1/4 cup blueberries
- 1/4 cup roasted carob pwdr (cacao for raw)**
- 1/4 cup ground flaxseed**
- 1/4 cup hemp protein**
- 1/4 cup unhulled sesame seeds**
- 1 tsp fresh lemon juice
- 1/2 tsp lemon zest
- Sea salt to taste
- 1/2 cup frozen blueberries
- **For an easier recipe, replace these ingredients with 1 cup Chocolate flavor Vega Whole Food Health Optimizer.
Green Lemonade

Juice all ingredients Place green lemonade in glasses Serve
- 1 bunch organic kale (use stalks and all)
- 1 cucumber (I leave the skin on)
- 1 organic lemon (I leave the peel on)
- 1 organic Granny Smith apple (remove core)
Black Bean Burrito Bake

Preheat oven to 350°. Remove one chile from can
- 1 (7-ounce) can chipotle chiles in adobo sauce
- 1/2 cup vegan sour cream
- 1 (15-ounce) can black beans, rinsed, drained, and divided
- 1 cup frozen whole-kernel corn, thawed
- 4 (8-inch) flour tortillas
- 1 cup bottled salsa
High Protein Garlic Mashed Potatoes

These mashed potatoes have a delicious buttery and garlicky flavour and lots of texture from the potato skins
- 10-12 large organic red potatoes
- 3-3.5 cups cooked navy beans (2 14oz small cans)
- 1/4 cup soy-free Earth Balance buttery spread*

- 4-5 large cloves of garlic

Peanut Butter Cups (raw, vegan)

Blend Chocolate Sauce ingredients
- CHOCOLATE SAUCE-
- 3 tbsp cacao powder
- 2 tbsp cacao butter (softened)
- 1/4 cup coconut oil (softened)
- sweeten to taste, I used 3 soaked dates but if you are looking for your chocolate to not have any white spots once frozen you will need to make sure the dates are completely dry.
- PEANUT BUTTER FILLING-
- 2 Tbsp Peanut Butter
- 1/2 Tsp Nutritional yeast

- cilantro leaves
- mint leaves

- 4 tablespoon natural peanut butter
- 1 tablespoon tamari sauce
- 1 tablespoon rice wine vinegar
- water-to thin to desired consistency
- honey-optional if sweetness desired
