No Bake Peanut Butter Chocolate Crispies with PB Fudge

Like a chocolate rice crispie square amped up and packed with crispy, chewy goodness
- Squares:
- 1/2 cup all natural peanut butter (chunky or smooth)
- 1/2 cup brown rice syrup
- 2 tsp pure vanilla extract
- 1/4 cup unsweetened almond milk
- 1/2 cup sifted cocoa powder
- 1/4-1/2 tsp sea salt, to taste
- 3 cups crisp rice cereal (I use GF Nature’s Path)
- 1/4 cup chopped unsalted peanuts (optional)
- 1/2 cup non-dairy chocolate chips
- Dark Chocolate Coconut Peanut Butter ‘Fudge’:
- 1 cup all-natural peanut butter
- 1/2 cup dark chocolate chips
- 1 tsp coconut oil
- Kosher salt, to taste
- 1/3 cup unsweetened coconut + coconut for sprinkling (optional)
Vanilla Coconut Shake

- 1 cup pecans
- 1/2 cup pitted dates
- 1 vanilla bean
- 2 Tbsp coconut oil
- 3 cups water

- 1 3/4 cup spelt flour
- 2 cups unbleached all-purpose flour

- 1 teaspoon fine grain sea salt

Primal Chocolate Chip Cookies

Place almond flour, salt and baking soda in a food processor Pulse in shortening, honey and vanilla until dough
- 2 cups blanched almond flour
- 1/4 teaspoon celtic sea salt
- 1/2 teaspoon baking soda
- 1/4 cup solid coconut oil (not melted)
- 2 tablespoons Maple Syrup
- 1 tablespoon vanilla extract
- 1/2 cup semi-sweet chocolate chunks
Hummus with Green Goo

In a food processor chickpeas, water, lemon juice, and salt
- Hummus-
- 4 cups chickpeas
- 1 cup water
- 1/2 cup freshly squeezed lemon juice-or less
- 1 1/2 teaspoons fine grain sea salt
- 1/3 cup tahini
- Green Goo-
- 1/4 cup Italian parsley
- 1 jalapeño, destemmed
- 1 large clove garlic
- 1/2 teaspoon fine grain sea salt-or less
- 2/3 cup extra virgin olive oil
Baked Bar Nuts

Based on the famous Union Square Cafe Bar Nuts
- NUTS-
- 2 1/4 cups mixed unsalted nuts (I used 1/2 cup peanuts, 1/2 cup cashews, 1/2 cup walnuts, and 3/4 cup almonds)
- SAUCE-
- 2 tbsp coarsely chopped fresh rosemary leaves
- Small Pinch cayenne pepper
- 1-2 tbsp Sucanat (or brown sugar)
- 1 tbsp maple syrup, to taste (optional)
- 1.5 tsp sea salt
- NUT COATING-
- 1 Tbsp Olive Oil
- 1 Tbsp Coconut oil

Chicken with Balsamic Vinegar, Sweet Onions, & Thyme

- 3 Tbsp all-purpose flour
- 3/4 tsp table salt, divided
- 1/2 tsp black pepper, freshly ground, divided
- 1 pound(s) uncooked boneless, skinless chicken breast, four 4 oz pieces
- 2 tsp olive oil
- 1 small vidalia onion(s), cut in half lengthwise, thinly sliced (about 2 cups)
- 1 cup(s) reduced-sodium chicken broth
- 2 Tbsp balsamic vinegar
- 1 Tbsp thyme, fresh, chopped, or less to taste
- 2 tsp butter
