- 2 egg white
- 1 tsp Vegetarian Worcestershire sauce
- 1 tsp garlic powder
- 6 Tbsp breadcrumbs
- Pinch salt and pepper
- Special Sauce-
- 2 Tbsp low-fat mayo
- 2 Tbsp ketchup
- 2 tsp dill relish
- 1/2 tsp lemon juice
- 1/2 tsp dried minced onion
- Pinch salt and pepper
- Big Macs-
- 4 slices cheese, cut in half
- 6 Whole Wheat Thin Buns
- 1 small white onion, thinly sliced
- 8 baby dill pickles, thinly sliced
- 6 large leaves Romaine lettuce, shredded
Sunshine Burgers (Raw)

Mix sunflower seeds, flax, nama shoyu, and Herbamare in a food processor till smooth
- 1 cup ground sunflower seeds
- 1/2 cup ground flax seed
- 1/4 cup water
- 2/3 cup chopped carrot
- 2/3 cup chopped celery
- 1/4 cup onion (optional)
- 1 tsp nama shoyu
- 1 tsp Herbamare seasoning (or to taste)
Hot 'N Sour Chicken Soup

Try this make-your-own takeout meal tonight
- 1 pound egg tagliatelle, for wide noodles or whole wheat spaghetti, for a heartier soup
- 6 pieces boneless, skinless chicken thighs
- Salt and black pepper
- 1 1/2 teaspoons coriander, half a palmful
- 2 tablespoons peanut oil or vegetable oil, divided
- A couple of handfuls of button mushrooms, sliced
- 1 inch ginger root, grated
- 3 to 4 cloves garlic, grated or minced
- 1/4 cup rice wine vinegar, eyeball it
- 1/4 cup Tamari or low-sodium Tamari, eyeball it
- 6 cups vegetable or chicken stock
- 2 tablespoons cornstarch
- 2 tablespoons water
- 1 small bunch scallions, thinly sliced on an angle
- A couple of handfuls crispy bean sprouts
- Cilantro leaves, for garnish
- Lime wedges, for garnish
- Sriracha or other hot sauce, to pass at table
Western Bean Salad

Drain and rinse beans. Combine all ingredients
- 1 540ml can yellow beans
- 1 540ml can green beans
- 1 540ml can kidney beans
- 3/4 cup Catalina salad dressing-or make your own
- 1 tsp celery seed
- 1 cup celery
White Bean Hummus

In a food processor, combine all ingredients except water, thyme, and basil
- 2 cups cooked cannellini (white kidney) beans (drained and rinsed if using canned beans)
- 1 tbsp freshly squeezed lemon juice
- 2 tbsp tahini
- 1 small to medium clove garlic, sliced
- 1 – 2 tbsp extra-virgin olive oil (see note)
- 2 tbsp red wine vinegar (see note)
- 1/2 tsp dijon mustard
- 1/2 tsp sea salt
- 2 1/2 - 3 tsp fresh thyme, roughly chopped
- 1/4 cup fresh basil, torn or roughly chopped
- 1-2 tbsp water (may not need, just to thin dip as desired)
- freshly ground black pepper to taste
Lighter Buffalo Chicken Pasta Salad

Pasta, bell peppers, onion, and chicken are tossed in a spicy yogurt, and hot sauce dressing
- 1 (16 ounce) package uncooked rotini pasta-Brown rice pasta works great
- 1/2 cup plain thick yogurt
- A squirt of mayo
- 1/4 cup+ Franks Red hot
- Sprinkling of Mrs. Dash
- 1/2 teaspoon black pepper
- cooked chicken diced
- 1 each red, yellow and orange bell pepper, diced
- 1 small red onion, diced

- 4 Cups roasted Acorn Squash (1 medium squash)
- 1 cup parsley (or fresh basil)
- 3/4 cup plain plant milk (almond/hemp/soy)
- 1/3 cup Nutritional Yeast Flakes
- 2-3 Tbsp Olive Oil
- 2-3 Tbsp Dijon Mustard
- 2-3 Tbsp apple cider vinegar
- 2 Tbsp roasted garlic
- 2 Tbsp dried Italian herbs (basil, oregano, thyme)
- 1 Tbsp maple syrup
- 1 tsp red pepper flakes or dash of cayenne

- 1 bag pasta-Kamut/Spelt/Brown Rice Penne
- 2-3 cups mushrooms

Homemade Goat Cheese With Basil and Garlic

Pour the goat's milk into a medium pot
- 4-1/2 cups (1 L) goat's milk
- 2 tbsp (30 ml) distilled white vinegar
- 2 heaping tsp chopped basil (fresh or frozen)
- 1 large garlic, minced
- salt to taste

- 1 cup water
- 4 cups pumkin cut into med chunks (1 small pumpkin)
- 8 dates, pitted
- 2 tsp vanilla
- 2 tsp cinnamon
- 1 tsp nutmeg
- dash ginger
- dash clove
- 1/4 tsp cardamom
- 1/2 tsp pumpkin pie spice
- dash salt
- 4 Tbsp Agar Agar
- 1/4 cup honey
