Enchilada Casser-Ole!

In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain
- 1 pound lean ground beef (90% lean)
- 1 large onion, chopped
- 2 cups salsa
- 1 can (15 ounces) black beans, rinsed and drained
- 1/4 cup reduced-fat Italian salad dressing
- 2 tablespoons reduced-sodium taco seasoning
- 1/4 teaspoon ground cumin
- 6 flour tortillas (8 inches)
- 3/4 cup reduced-fat sour cream
- 1 cup (4 ounces) shredded reduced-fat Mexican cheese blend
- 1 cup shredded lettuce
- 1 medium tomato, chopped
- 1/4 cup minced fresh cilantro

Lentil Sloppy Joes

Bring the water and the lentils to a boil in a medium sized pot
- 2 cups dry lentil, rinsed
- 8 cups water
- 1 clove garlic, whole
- 1/2 tsp salt
- 1 large onion, chopped
- 3 cloves garlic, crushed and minced
- 2 15oz cans tomato sauce
- 2 tbsp bbq sauce
- 2 tbsp tamari
- 1 tbsp dark agave (or maple syrup)
- 1 tbsp mustard
- 1 tbsp paprika
- salt, pepper and cayenne pepper to taste
KETTLE CORN

Oat Soda Bread

I'm more likely to have rolled oats on hand than oat flour
- butter, to grease pan
- 2 cups rolled oats
- 2 1/4 cups unbleached all-purpose flour, plus more for dusting and kneading
- 1 3/4 teaspoons baking soda
- 1 1/4 teaspoons fine-grain sea salt
- 1 3/4 cups buttermilk plus more if needed, and 2T. for brushing
- mixed seeds - sesame, caraway, poppy, etc
Mango Sorbet

Directions: Place the beans in a colander and rinse throughly
- Ingredients:
- 1 (28 oz.) can black beans
- 2 tbsp. olive oil
- 1 yellow onion, chopped
- pepper, chopped or minced (bell, Anaheim or jalapeno depending on your taste)
- ½-1 cup reduced-sodium chicken or vegetable broth
- 1 ½ tsp. dried oregano
- 2 bay leaves
- ½ tsp. salt
- 3 cloves garlic, minced or pressed
- 1 tsp. pureed chipotles in adobo
- 1 ½ tsp. ground cumin
- ¼ cup freshly squeezed orange juice
- Juice of 2 limes (added lime zest - optional)
- 1 tbsp. white wine vinegar
- Chopped fresh cilantro, to taste, plus more for garnish
Black Pepper and Molasses Pulled Jackfruit Sandwiches

- 3 tablespoons ketchup
- 1 tablespoon cider vinegar
- 1 tablespoon prepared mustard
- 1 tablespoon molasses
- 3/4 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon freshly ground black pepper
- 1/8 teaspoon ground ginger
- 1-2 cans young green jackfruit drained and rinsed
