Peas and Carrots Soup with Dumplings

Heat a couple of tablespoons EVOO, 2 turns of the pan, over medium-high heat in a large soup pot or dutch oven
- 2 tablespoons Extra Virgin Olive Oil
- 3 tablespoons butter
- 3 carrots- peeled, halved length-wise and thinly sliced
- 1 rib celery, chopped
- 1 medium onion, chopped
- Salt and Pepper
- 1 fresh bay leaf
- 2 rounded tablespoons flour
- 1 32-ounce container (4 cups) chicken/vegetable stock
- 1 rounded Tbsp Dijon mustard
- 1 cup frozen peas
- 2 Tbsp finely chopped fresh tarragon, dill or parsley
- 1 8-ounce box biscuit mix (about 2 cups), such as Jiffy Buttermilk Biscuit Mix, batter prepared according to package directions.

- 2 cups mushrooms, chopped
- 1/2 stalk celery, chopped
- 2 tsp fresh thyme
- mushroom gravy
Pecan Pie Cookies (Raw)

Sweetened with dates, packed with pecans, and spiced with cinnamon and a hint of orange
- 1 cup pecans
- 1 tsp ground cinnamon
- 1 tsp orange oil or orange juice
- 1 cup pitted medjool dates
Creamy Curry Dressing

Blend until smooth
- 1 Tbsp curry powder
- 1 apple cored, diced
- 1 clove garlic
- 1 Tbsp grated ginger
- 1 cup olive oil
- juice of 1 lemon (2 Tbsp)
- 1/2 tsp salt
Sun Burgers

Place first seven ingredients in bowl, mix then add water, mix well
- 2 stalks celery, chopped (3/4 cup)
- 1/4 cup yellow onion, chopped
- 1/2 cup red bell pepper, chopped
- 1 tsp sea salt
- 2 tsp oregano
- 1 cup sunflower seeds
- 1/2 cup flax seeds, ground
- 1/2 cup water

- 1 cup water
- 1 cup sugar
- 1 cup lemon juice
- 1 cup lime juice
Creamy Basil Sauce

Blend all ingredients in a blender, food processor, magic bullet, or Vitamix until well mixed
- ½ cup hemp butter
- ½ cup water
- 1 tsp lemon
- 1-2 dates (pitted)
- 1 tsp oregano, dry
- ½ tsp thyme, dry
- ¼ cup fresh basil, packed
- ¼-1/2 tsp salt (start with ¼ then adjust to taste)
- 1 tbsp olive oil
Coconut Breakfast Cakes with Syrups and Butters

BERRYLICIOUS SYRUP ORANGE VANILLA SYRUP VANILLA SYRUP OLIVE BUTTER COCONUT BUTTER
- 1 cups whole flax seeds-ground
- 1 Tbsp liquid coconut oil
- 1/4 cup agave or maple syrup
- 1/4 tsp sea salt
- 1/8 cup water
- *optional add one ripe mashed banana
- *subtitute sweetener with a couple of dates
- *add cinnamon or some pumpkin puree and pumpkin pie spice
Raw Mexican Fajitas

Marinate mushrooms and vegetables for a few hours
- 4 large Portbello mushrooms, sliced thin
- 1 red bell pepper, sliced thinly
- 1/2 sweet onion, sliced thinly

- 4 tablespoon Nama Shoyu (raw soy sauce)
- 2 teaspoons chili powder
- 1 tablespoons lemon juice
- 1 finely diced jalapeno
