Blanket Stew in a Gravy Broth

This stew is the equivalent of wrapping yourself in a warm, fuzzy blanket in front of the fireplace
- GRAVY BROTH-
- ¼ cup nutritional yeast
- 1 tsp yellow mustard
- 1 tbsp tamari
- 3 large garlic cloves, minced
- 1 tbsp cornstarch or arrowroot powder
- 2 tbsp tahini
- 1.5 tbsp balsamic vinegar
- 1.5 tbsp blackstrap molasses
- ½ tsp agave nectar/maple syrup
- 2 tbsp olive oil
- 9 cups vegetable broth
- VEGETABLES & GRAINS-customize any way you like!
- 2 small potatoes, peeled and chopped(left out)
- 1/2 acorn or butternut squash, peeled and chopped
- 1 large can of corn, drained and rinsed (or frozen)
- 1 large tomato, chopped (or canned marzano)
- 1 large red onion, chopped
- 3 stalks of celery, chopped
- 3 carrots, peeled and chopped
- 1/2 cup uncooked brown rice, rinsed
- 1/2 cup uncooked lentils, rinsed
- 1/2 tsp cumin
- 1/2 tsp chili powder
- Black pepper
- sea salt-as necessary
- OPTIONAL-pumpkin puree
- SERVE-*Garlic Chive Drop Biscuits (gluten free, vegan)
Sloppy Maple-BBQ Turkey Joes

In a large skillet, heat the EVOO, 1 turn of the pan, over medium-high heat
- 1 tablespoon EVOO - Extra Virgin Olive Oil
- 1 1/2 pounds of ground turkey
- 1 tablespoon poultry seasoning, scant plamful
- Salt and pepper
- 1 small red bell pepper, chopped
- 1 small onion, chopped
- 2 cloves garlic, finely chopped
- 1 cup tomato sauce
- 1/4 cup dark amber pure maple syrup
- 3 About 3 tablespoons soy sauce
- 2 About 2 tablespoons cider vinegar
- 2 About 2 tablespoons brown sugar
- 1 rounded tablespoon Dijon mustard
- 8 soft burger rolls, split
- Shredded cheddar or pepper jack cheese
- Chopped scallions, for topping
- Chopped pickles, for topping
In a Jiffy Curry Chickpea Patty

Preheat oven to 375F. Line a baking sheet with parchment paper and set aside
- 1/2 cup regular oats
- 10 baby carrots or 2 carrots
- 1.5 tsp good quality curry powder)
- 1/2 tsp Paprika
- 1/4 tsp Tumeric
- 1/4-1/2 tsp sea salt, to taste
- 1/4 tsp ground black pepper
- 1 tsp Parsley flakes or more fresh
- 1.5 cups cooked chickpeas
- 1-2 tbsp coconut oil (or oil of your choice), melted
- 3 tbsp sunflower seeds
- 1/4 cup pepitas (pumpkin seeds)
- Optional
- 1 small onion chopped
- ½ red pepper chopped
- 1-2 cloves garlic
Oatless Oatmeal Cookies

Combine all ingredients in a food processor and mix until a dough forms
- 3/4 cashews, soaked a few hours
- 3 pitted dates
- 1 teaspoon coconut oil
- 1 tablespoon dried coconut flakes
- pinch of cinnamon
Fennel-Lemon Salad

Remove the frilly end of the fennel and trim the root
- 1 fennel bulb, shaved thin with a mandoline
- 2 Tbsp extra virgin olive oil
- 2 Tbsp fresh lemon juice
- fresh thyme leaves, chopped
- fresh parsley, chopped
No-Fry Falafels

Boil water and pour over bulgur
- 1/3 C bulgur
- 1 t chopped garlic
- 1 small onion, chopped
- 1 - 398 mL can chick peas, drained
- 1/2 C bread crumbs
- 2 T lemon juice
- 1 t ground cumin
- 1/4 t each salt and pepper
- dash hot pepper sauce
- 1/2 C fresh chopped parsley
- Pita bread, tzatziki, pickles, tomatoes, lettuce for garnish.
Maple Cream Soda

Mix, add ice, drink, say “mmm mmm
- 12 ounces sparkling water (club soda, seltzer, sparkling mineral water)
- 2 teaspoons maple syrup (or more, as you like)
- 1/4 teaspoon pure vanilla extract
Healthy Strawberry Oat Squares

Preheat oven to 350F. Line a square pan (I used a 9×9) with parchment paper and oil the sides of the pan and base
- For Oat Base:
- 1.5 cups regular oats
- 1 cup whole-grain Kamut flour
- 1/2 tsp baking soda
- 1/2 tsp sea salt
- 1/2 cup Sucanat sugar (or brown sugar)
- 1 chia egg (1 tbsp chia + 4 tbsp warm water, mixed)
- 1/2 cup + 2 tbsp coconut oil/grapeseed oil, melted
- 1/4 cup pure maple syrup
- 2 tbsp almond milk
- 1 tbsp sesame seeds (for topping only)
- For Strawberry Jam:1 jar fruit juice sweetened jam or
- 2 & 1/4 cups chopped strawberries, chopped into 1/2 inch pieces
- 3-4 tbsp sugar, to taste
- 1 tbsp chia seeds
Piña Colada Smoothie

Cut the pineapple into bite sized pieces so it is easier for the blender to puree
- 1 small pineapple or 1/2 a medium pineapple
- 1 can coconut milk
- 1 cup pineapple juice
- pinch nutmeg as optional garnish
Sort-A Soba Noodle Bowl

1. Place a large pot of salted water over high heat and bring to a boil
- 1 pound whole wheat spaghetti or soba noodles
- salt and freshly ground black pepper
- 2 tablespoons canola oil, divided
- 1 bunch of scallions, cut into 3 inch pieces
- 2 handfuls of string beans, cut lengthwise into strips
- 1 red bell pepper, cut into strips
- 1 green bell pepper, cut into strips
- 3 cloves garlic, chopped
- 1/3 to 1/2 cup orange marmalade
- 1/4 cup tamari
- 1 tablespoon chili oil
- 1/4 cup chicken stock (if needed)
- 1 palmful sesame seeds and/or slivered almonds
