Sloppy Hot Wing Joes

Heat a large skillet with extra-virgin olive oil over medium-high heat
- 2 tablespoons extra-virgin olive oil
- 2 pounds ground chicken or turkey breast
- 1 carrot, peeled and chopped or grated
- 2 stalks celery, chopped
- 1 yellow onion, finely chopped
- 2 to 3 cloves garlic, finely chopped or grated
- Salt and freshly ground black pepper
- 2 tablespoons red wine vinegar
- 2 tablespoons brown sugar
- 1 tablespoon Worcestershire sauce
- 1/4 to 1/3 cup hot sauce (recommended: Frank's Red Hot)
- 1 cup tomato sauce
- 1 cup chicken stock
- 8 good quality burger rolls, split and toasted
- 1 cup blue cheese crumbles
- 2 large dill pickles, chopped
Hot 'N Sour Soup

Bring a large pot of water to a boil for pasta
- 1 pound egg tagliatelle, for wide noodles or whole wheat spaghetti, for a heartier soup
- 1 tablespoons peanut oil or vegetable oil,
- A couple of handfuls of button mushrooms, sliced
- 1 inch ginger root, grated
- 3 to 4 cloves garlic, grated or minced
- 1/4 cup rice wine vinegar, eyeball it
- 1/4 cup Tamari or low-sodium Tamari, eyeball it
- 6 cups vegetable or chicken stock
- 2 tablespoons cornstarch
- 2 tablespoons water
- 1 small bunch scallions, thinly sliced on an angle
- A couple of handfuls crispy bean sprouts
- Cilantro leaves, for garnish
- Lime wedges, for garnish
- Sriracha or other hot sauce, to pass at table
Dijon Potato Salad

Place a steamer basket in a saucepan filled with 1 inch water
- 1 1/2 pounds red new potatoes, scrubbed and halved (quartered if large)
- 1 tablespoon white-wine vinegar
- 1 tablespoon Dijon mustard
- Coarse salt and ground pepper
- 2 tablespoons olive oil
- 1/2 cup chopped fresh parsley
Red Curry Peanut Noodles

1. Cook the pasta until al dente, according to package instructions
- 8 ounces dried spaghetti or linguini
- 3/4 cup smooth peanut butter
- 3 tablespoons red curry paste
- 1/4 cup chicken or vegetable broth
- 2 tablespoons fresh lime juice
- 1 tablespoon sugar
- Sea salt to taste
- 1 cup shredded carrots
- 1 cup shredded broccoli stems
- 1/4 cup dry-roasted peanuts, chopped
- Lime wedges for serving
