Veggie Patties: Mash black beans, with a fork, in a medium size bowl
- Veggie Patties:
- 6 Rhodes Warm-N-Serv™ Whole Wheat Rolls, baked according to directions on package
- 15 ounce can black beans, drained & rinsed thoroughly
- 4 ounce can diced green chilies
- 3/4 cup bread crumbs
- 1 teaspoon smoked paprika
- 2 cloves garlic, finely chopped
- 1 egg white salt & pepper, to taste
- 1 tablespoon olive oil
- Slaw:
- 1 tablespoon olive oil
- 1 red or green pepper, finely chopped
- 1/2 large yellow onion, finely chopped
- 1 jalapeno pepper, finely chopped
- 1 clove garlic, finely chopped
- Sauce:
- 1/3 cup low-fat sour cream
- 1/2 large avocado, mashed
- 2 tablespoons fresh lime juice

Rainbow Slaw with Chipotle Mayo

Salad Preparation: Toss all of your veggies in a very large bowl
- For the Rainbow Slaw:
- 5 c. finely shredded cabbage
- 1 ½ c. shredded carrot
- 1 c. red & yellow bell pepper, julienned
- ¾ c. red onion, cut into very thin strips, preferably with a mandoline
- ¼ c. chopped cilantro leaves (well packed)
- For the Chipotle Mayo:
- 1 c. sunflower seeds, soaked in water for 4-6 hours, drained and rinsed well
- ¾ c. olive oil
- 1/3 c. water
- ¼ c. lime juice
- 3 cloves of garlic
- 1 tsp ground chipotle pepper
- 1 tsp Himalayan salt
- 1 tsp cumin
- ½ tsp coriander

- 3 Tbsp soy sauce
- 1 onion, sliced
- 2 cups sweet potatos, cubed 1"
- 1 carrot, sliced
- 1 celery stalk, sliced

- 1 15-oz can garbanzo beans
- 1 15-oz can crushed tomatoes
- 1/2 cup fresh cilantro, chopped

In a small soup pan heat all the base ingredients
- 1 1/2 cups Almond Milk
- 1-2 shots espresso OR 1/2 cup strongly brewed coffee
- 1 1/2 Tbsp canned pumpkin (unsweetened)
- sweeten to taste (I used maple syrup)
- 1/2 tsp pumpkin pie spice OR cinnamon/nutmeg
- 1/2 tsp vanilla extract
- dash of cayenne (optional, but recommended!)
- tiniest pinch of salt
